2. STARCH
Strach is the storage form of carbon in plants
Present inside plant cell as a source of polysaccharides
used for storing energy
Starch exist in the form of semi crystalline structure called
starch granules
3.
4. Starch granules
assists in the field
of forensic
science
Starch identification in forensic
science is used for stomach
content analysis of an individual
The study of microscopic granules
helps in the analysis of food
residues present in stomach
content, vomit or feces
This microscopic analysis helps
to access the last meal taken by
the deceased & workout the
circumstances prior to death
5. • Starch is found in many food sources
• Starch granules are present in seeds ,roots , stem ,tuber
and leaves of the plant
• Starch granules remains preserved in various environments
conditions making them available for analysis of old and
environmentally exposed samples
6. Structure of starch
• It composes of two homopolymers of alpha-D-
glucose
• Amylose and amylopectin
• They vary in their structural organization
• Semi crystalline structure is contributed by
amylopectin molecule
• Amorphous structure is contributed by amylose
7. Identification features of starch granules
• Shape of starch granule
• Size
• Helium/core of the granule
• Growth rings/lamelle
• Fissures
• Extinction cross
• Birefringence
8.
9. Starch granules have unique
microscopic characteristics that
distinguish them from other starch
granules of different sources
The starch grain analysis is also
helpful for checking the adulteration
of food samples
Iodine test is the preliminary test for
presence of starch in a sample
based on the staining of starch
molecules by Lugol's iodine solution
