2. CONVECTION
Heat travels with air or liquid that is moving. This
sets up currents. Hot air/liquid rises. Cold
air/liquid falls to take its place. Eventually the
whole area is heated.
3. RADIATION
Heat travels to food in rays in the same way
that it travels to earth from the sun. Radiation
occurs when food is grilled. The food does
not touch the grill, but the heat cooks the food.

• Using fats….. Roasting and frying
• Moist methods….. Boiling, poaching, stewing,
casseroling, steaming, pressure cooking
7. MICROWAVE COOKING
• Electromagnetic waves cause the particles of food
to vibrate.
• This causes heat to build up inside the food.
• The heat then travels through the food by
conduction.
