occurring or introduced contaminants, remains a concern for US consumers because of the potential for
adverse health effects. The extent to which a contaminant in a food may be considered a risk to health depends
upon the nature and level of the compound present, and the sensitivity of individuals or groups in a population
to potentially toxic compounds. Specific population groups have been identified as being at particular risk from
exposure to contaminants in seafood. Paradoxically, these population groups may especially benefit from the
nutrients in seafood. For most of the general population, optimal benefits from seafood can be obtained by making
choices to maximize intake of desirable nutrients balanced against exposure to contaminants that may pose
a health risk. Making such selections, however, requires that consumers are aware of the variety of seafood
available and are provided information on both benefits and risks to inform their choices.
