The province of Provence borders to Italy, the area

& many herbs.
In Provence cuisine, plenty of olive oil & herbs are
used e.g. thyme, basil, rosemary, they are also used
in northern Italy
Ratatouille, Nicoise salad & Bouillabaisse are few
specialties.
