Launching back in December Janine knew immediately that
she’d found the perfect location, with adjoining store Organic
Avenues just next door. Attracted by their complementary
pure ideologies (Safi means ‘pure’ in Swahili) the proximity
also gives her clients the option to indulge in an organic tea
or treat before popping next door to receive one of her many
relaxing treatments.
Not always a Bilgola local, Janine grew up in a small, tight knit
community town near South Africa’s Kruger National Park
where, she laughs, “everyone knew everyone”. It was here that
Janine commenced her career working in the neighbouring
area for both local clients and travelling safari tourists, before
setting off to pursue her dream of working in high end spas
around the world.
After travelling and working extensively throughout Europe
Janine fulfilled her dream to practice in the rather glamourous
Notting Hill, daily rubbing shoulders with the local glitterati
(her first regular client was British model/singer Sophie Ellis
Bextor). An exciting and slightly surreal season of her life,
she recalls it provided fantastic training, and it was during
this time she met her ex-pat Northern Beaches husband,
resettling with him in Australia 8 years ago.
Her past wanderlust is beautifully reflected in The Safi Beauty
Room design- a culmination of her travels reflecting the many
places she’s worked - however it’s clear her heart is well and
truly tied to the place she and her young family now call home.
So what’s the best bit about Bilgola for a self-confessed
summer-lover? “I love that the locals are really into nature
and love bushwalking.” Janine notes. “On weekends ask them
what they’re up to and they’re off for long walks with kids.”
She also loves the tropical vibe and has observed clients from
beyond the beaches often come to Clareville to have their own
little mini getaway experience with lunch, a walk and a swim.
“We’re very spoilt.” She concedes.
As for Bilgola’s biggest change during her time here? “It’s
expanding”, she tells me. “Little by little it’s growing.” Like her
own recent venture, local businesses are cropping up and the
locals love it. “We can walk to shops, walk to school. It’s just
a lovely, cute, local vibe.”

In 2013, Domenico Pizzitola was asked by a friend to design
a light. The licensed electrician had always been creative, but
building this piece sparked an interest in combining his trade
with his artistic side.
Creating electrical pieces of art for family and friends soon
followed and Domenico realised that he had the makings of
a viable business. Before taking his talent to the next step,
the 28 year old was careful in ensuring that his creations
complied with Australian safety standards. He then started
the company Build Your Light taking commissions from a wide
variety of clients.
These lights primarily use copper as a sculptural, stylish yet
practical material. Depending on the owner’s preference, the
copper can be allowed to age and develop a natural patina,
or they can be maintained to stay shiny, sharp and polished.
Domenico takes his inspiration from A Winter’s Tale, a film
which uses light as a powerful allegory for the human spirit.
One character states “everything is connected by light.”
Build Your Light takes commissions to create pieces for the
home, small businesses, café’s and restaurants, corporate
events and office spaces. Domenico will work closely with
clients to create dramatic, beautiful bespoke pieces. *

As we all know, fueling our bodies with all things green is
a proven way of detoxing the body. Green smoothies are the
latest trend and blending up all sorts of green plants and fruits
like kale, spinach and avocados just to name a few, is one of
the easiest ways to get the nutrients we need to live a healthy
life. But did you know that you can also detox your body with
the simple house plant?
Well it’s true. Back in the 80’s, NASA run a study on ways to
clean the air in space stations. Results proved the beautiful
green indoor plant provided a natural way of eliminating
from the air significant amounts of toxins such as Benzene,
Formaldehyde and Trichloroethylene. At school, we all learnt,
that plants release oxygen, the gas we breathe in, and absorb
carbon dioxide, the gas we breathe out, this process is called

Think back to the days when you were on that beautiful drive
through the mountains or country side. You stop, get out of the
car to take a few photos and gaze at the views and smell the
fresh air. Once out of the car you can’t get enough of that fresh,
fresh air. It tastes great, it smells great and it opens up your
eyes. How good does that feel.
Briohney Anderson from Copper Beech, The Flower Merchant,
has been using the humble indoor house plant in her floral
styling of properties for sale for years and has some top tips
to share with us.
Any space is suitable for a beautiful green indoor plant,
however, I love to use them mainly in the bedroom, bathroom
and living areas.
At a recent styling project in Mona Vale, Briohney used three
different types of plants to not only decorate, but to remove
the toxins that can linger within a bathroom. Hanging them in
a vase encased in a macramé basket, creates a great aesthetic
feature.
Having good quality indoor air is very important, especially
since so many of us spend so much time inside. Briohney has
a few favourite plants that she finds work well for homes.
The Sanseviera, or Mother-in Laws tongue has long strappy
leaves, it’s striking and hardy. The Golden Pothos works well
hanging in bathrooms or living rooms and Fiddle Leaf Fig is
a beautiful feature plant that is hardy and unique with its large
paddle shaped leaves. *

Enter the eponymous High Street Bakery on any given day and
you’ll find yourself face-to-face with their lively combination
of young professionals, retirees, neighbourhood locals and
young families; all taking time out to experience, what I soon
realise, is a truly unique place.
Upon entering the cafe I am immediately struck by the exposed
brick, rustic leather cushions, and cosy, bucolic touches that
complement the beautiful fare on display. From the small,
wooden sugar boxes to the playful rope-chandeliers hanging
from the ceiling, the décor is imaginative and inviting; and it’s
these small details that give the space a warm and welcoming
ambiance that is clearly popular with their patrons. As I chat
with their convivial staff member Zac, fellow barista, Sonja,

delivers our coffees to the table with a friendly smile. On
closer inspection I realise my humble flat white is replete
with a moustached baker wearing an impressively identifiable
chef’s hat. How they accomplish this feat with steamed milk
and caffeine alone I will likely never know, but my fellow-
diner informs me this is a fun and frequent signature gesture
of theirs and we share a moment to compare our impressive
illustrations.
The far shelves are adorned with every bread imaginable,
delectable pastries populate the front cabinets, and to the back
of the tabled area is the entrance to their large, open kitchen.
And this is where the magic happens. Originally a German
bakery when owner Huong Nguyen purchased the business
27 years ago, she also inherited their impressively diverse
multicultural team. Drawing on each respective background,
as well as her own Vietnamese heritage, the resulting fusion
is what Huong describes as an ‘international bakery’, a rare
offering where you will find traditional and authentic French,
Italian, German, Vietnamese and San Francisco staple
breads, pastries and sweets from bona fide local artisans. In
case that’s not enough Huong also keeps the menu fresh with
seasonal additions, and enjoys trialling new specials on her
regulars, a great way, she informs me, to ensure the creation
has passed the most stringent and discerning of tests.
The staff are cheerful and jovial and there is genuine
engagement and familiarity with their patrons. The food is
exceptional and well-priced and, as I watched the baristas and
service team share jokes, it’s apparent I’m observing a happy
team who love their job and speak with affection for their
customers in a place that’s well worth a stop-in.
Must try: The pork rolls (popular, I’m told, with their tradie
contingent) and the newly added pho (pronounced “fahr”),
a Vietnamese beef noodle soup and a personal fave of our
waiter, Zac. *

Seasons
One of the most beautiful things about life is finding and
getting in tune with its rhythm. In the cooler winter months
it’s time to curl up with warm blankets, cosy socks and cups
of organic herbal tea. Mother Nature gets behind the changing
of the seasons by producing exactly the right foods our body’s
need during each season.
In order to support our health we should eat with the seasons
- winter is a time for nourishing and warming meals. It’s a time
for slow cooking - think stews, soups and warm salads filled
with beautiful root vegetables that not only taste their best,
but also give the most nutritional benefit through the winter
months.
I see winter as a time to go back to basics. Forget the latest
fads and instead give your body simple, traditional, nourishing
food. Personally I love winter food. I love the flavours, the
spices and the way the food comes from the soil. There is no
better time than during these cooler months to explore the
joys of home cooking.
Get down to your local farmers market or maybe flex your
green thumb and grow your own vegetables in your garden!
You will feel more connected to your local community and your
home. When we eat seasonally and locally our bodies get in
sync with nature’s rhythm and we are able to maintain better
balance in our lives. We develop an innate connection to nature
and our food and I guarantee you will start to crave more real
food (and less junk!) as your body gets in harmony with nature.
Hearty root vegetables are abundant in the winter and add
more warmth to our bodies. The energy is grounding and
calming within us when we eat these vegetables. That’s why

What to do:
If you are using a blender:
1. Place all the ingredients into the blender with approximately
½ cup of apple juice to get it going, then slowly add more apple
juice as needed. I recommend using a powerful blender such
as Vitamix.
2. If you are not a fan of the pulp then pass through a fine mesh
strainer (but pulp never hurt anyone!)
If you are using a juicer:
1. Pass all the vegetables and fruit through the juicer. *

Preparation time: 15 minutes
Yield: 2 servings
What You Need:
2 beets, peeled and quartered
1 tbsp size piece of fresh ginger, skin removed
2 carrots, peeled and chopped into medium size chunks
1-2 cups cold pressed organic apple juice
Optional: if you are using a juicer you could use an apple
instead of the juice

What to do:
1. Preheat the oven to 180 degrees celsius
2. Roast pumpkin and red onion with olive oil and sea salt for
approximately 25-30 minutes.
3. Cook the quinoa with enough water to cover (approximately
1-2 cups) and bring to the boil, then reduce the heat to a
simmer and add the spices. Simmer for approximately 20
minutes until all the water is absorbed.
4. Sauté the broccoli gently, don’t overcook so it still has a bit
of crunch.
5. Mix together the ingredients for the dressing.
6. Plate roasted vegetables, broccoli and quinoa and top with
the dressing.
7. Scatter pomegranate seeds, almonds and parsley on top.
8. Optional: crumble goats milk feta on top. *

Broccoli Spiced
Quinoa Warm Salad
Preparation time: 45 minutes
Yield: 2-3 servings
What You Need:
1/3 pumpkin, chopped into medium sized pieces
1 red onion, chopped into large wedges
Extra virgin olive oil, for roasting the vegetables
Sea salt, generous pinch for roasting the vegetables
Medium sized head of broccoli, chopped into large pieces
For the spiced quinoa:
½ cup quinoa
1 tsp cinnamon
1 tsp turmeric
1 tsp cumin
For the dressing:
2 tsp organic dijon mustard
1 tsp extra virgin olive oil
Juice of 1 lemon, freshly squeezed
1 tsp apple cider vinegar
Pinch of cayenne pepper
Top with fresh parsley, pomegranate seeds and roughly
chopped almonds. Optional: Crumble goats milk feta
over the top.

Market
Upon entering the Frenchs Forest market I felt an instant
regret that I have lived in the area for nearly four years and
have never visited. In fact up until a few months ago I didn’t
even know of its existence. How could I be so far out of loop?
I could only draw one conclusion; all of the market followers
and organic eaters from the area have conspired against me
in order to keep this precious gem all to themselves!! – All
twenty-five thousand of them…
I simply didn’t know where to start. My mind was racing
as I was hit with so many wonderful offerings. Stall after stall
aligning the pathways but which path do I take? Am I going to
miss out on something if I don’t move quickly enough? Will the
organic fruit and veg look bare and a little limp if I search out
the hand crafted fare first? Where’s the coffee? Where’s the
coffee? Where’s the coffee??
Like a Sunday market version of supermarket sweep
I frantically gathered as much as I could in the hour I had
allocated. But a word of advice - don’t do this. This is so much
more than a quick market shop; it’s an enjoyable day out.
Take the family friends, grab lunch from one of the many

When I need a little culinary inspiration I love to pop by Food Estate in Belrose to see what
new goodies are in the warehouse. Also chatting with owner-and-passionate foodie James is
half the fun! He welcomes every customer enthusiastically and soon has you feeling like your
home kitchen could be turned in to a hatted restaurant.

This month Arancini is on the menu! This moorish
mozzarella filled delight has come a long way from
it’s humble beginning as the not so fancy product of
left over Risotto and bread.
Place on an oven tray with a light spray of olive
oil and pop in to the oven for 15 minutes at 180
degrees. Keep and eye on them as any longer and
they may break open. A perfect accompaniment is
the Birch Waite Tomato Relish, Princi Smallgoods
Mild Cacciatore, Eggplant Polette, Wombat Valley
Aioli and generous shavings of Grana Padano.

STARS
During my time spent joyfully perusing the stalls at the Frenchs
Forest Organic Market, I was drawn to the unmistakable,
mouth-watering smell of bacon cooking. The delicious aroma,
lead me to two of the friendliest guys you’ll meet, cooking up a
storm for their adoring albeit hungry fans.
As I lined up with the masses for a tasty corn fritter feast,
I got talking with energetic owner Tamar. After seventeen
years in the food industry and ten of those spent as a head
chef, Tamar bravely decided to apply his years of experience
and entrepreneurial spirit to creating the incredibly popular
CornStars. I sat on a cushioned milk crate seat in the warm
sun and enjoyed every mouthful of ‘The Greenie’- a delicious
combination of corn fitter, broccolini, feta, crunchy kale and
topped with the goodness of one of their homemade relishes.
