Instant Mediterranean Tomato Soup
I LOVE soup, no matter the season or the occasion. I
love veggies too and perhaps that is why I love soup –
it’s made from veggies, usually. The instant, powder
type we get from the supermarket is not really, I
suppose. Come to think about it, they are not that nice
either.
The liquid type is usually laced with cream and preservatives and do more harm than good for
the health.
Unfortunately, soup takes time to make and working from home, teaching kids and trying to
keep the household running smoothly, we often tend to feel like something at the last minute.
Then we grab that instant soup and boil the kettle and watch how the pounds stack around the
hips.
While I am quite a good soup-maker, tomato soup is one thing I have not got right in the past.
I don’t know if it is because of my peculiar taste in tomatoes: cooked – always, raw – only in
salad, finely chopped, eaten fresh – cherry only, eaten as a snack – dried, on pizza – paste /
dried / cherry… you get the picture!
So I was absolutely blown away when I found this Instant Mediterranean Tomato Soup which is
good for you as it contains:
* 8 times the protein of regular tomato soup
* high fibre to help me feel fuller for longer
* only 104 kcal per serving!
Reading all the healthy stuff about it makes it sounds boring, so I won’t continue. I’ll just tell you
that it’s the most savory hot / cold snack I have ever enjoyed without feeling guilty afterwards.
It is thick, rich and delicious – definitely NOT diet food – just the way I like it!
