4-5 CARROTS, PEELED AND ROUGHLY CHOPPED

1 INCH GINGER, CHOPPED
1 TBSP CHOPPED CORIANDER LEAVES
2 ½ VEGETABLES STOCK

METHOD
1.Heat 1 ½ tsp butter in a deep non-stick pan,add in ginger and sauté for a minute.
2.Add in onion and sauté until the onion turns translucent,add chopped coriander and mix well.
3.Add orange rid and carrot,sauté again.
4.Add 2 cups vegetable stock,stir it.
5.Cover the pan and cook for 5 minutes or until carrot become soft.
6.Remove from the heat and let it slightly cool.
7.blend all ingredient to become a puree.
8.Heat the butter in a non-stick pan,add the puree and pour in the orange sunquick.

METHOD
1.Coat the fish with eggs and flour,Fry until slightly brown and keep aside.
2.Mix onion,coriander,tomato,pineapple,mango,lemon and passion mix fruit juice,vinegar and some salt
and sugar,stir and mix well.
3.Serve the salsa with the fish with sprinkle the chili on top of it.
