2. Food Industry Definitions
Interleave – the placement of a substrate in between, under, or
around a piece or portion. Often used interchangeably with the
term Underleave in the United States. Some examples of
interleaving are: slices of cheese, pasta sheets, pizza crust, burger
patties
Underleave – the placement of a substrate under or around a
portion or group of pieces. The differentiation between interleave
and underleave is most notable in European markets. Examples of
underleaving include: sliced sandwich meat setups (sub
kits), foodservice lay flat bacon, philly style steaks
3. Common Applications
• Sub Setups – Multi-slice lunchmeat portions separated by paper often
used by foodservice or retail processors for easy sandwich assembly
and accurate portion control
• Lay Flat Single Slice Bacon – 9 or 10 slices of bacon laid flat, not
overlapping (shingled), on a long sheet of greaseproof paper, used by
foodservice processors to allow their end users an easy method of
applying the bacon directly to the grill. Rather than peel and apply
individual slices they flip the entire sheet onto the grill
• Frozen Burger Patties – Individual burgers separated with wax paper
for foodservice and retail applications. Burgers may experience slight
variations in temperature throughout distribution and a paper
separator ensures easy separation fro the end user. Multiply laminated
papers can be used to enhance separation characteristics
