Good Afternoon. I am Bren Cueni, Manager, Member Services with the Ohio Restaurant Association. It’s my pleasure to welcome you to “Responsible Alcohol Service”.
As you may know the ORA Restaurant Education Series (RES) provides members free access to educational events that help them sustain and grow their businesses and are developed based on member feedback. RES events support a key ORA initiative: the education of our members. All educational events are posted on the ORA website – www.ohiorestaurant.org
To find past events go to the Education & Events Tab then Restaurant Education Series tab. This is also where this webinar recording along with the PowerPoint slides will be posted in the next 2-3 business days.
Heartland Payment Systems & United Healthcare are Sponsors of all RES events. We thank them for their support of this valuable programming.
Before we get started, I want to review a few housekeeping items and let you know how you can participate in today’s webinar.
We will take your questions during the webinar. I will show you how to do that momentarily.
After the webinar ends a survey will pop up. It will take you 3-5 minutes to complete. Please respond to this survey in order for us to improve our Restaurant Education Series. We want to make sure we are offering education you find valuable.
Before we get started, I want to let you know how you can participate in today’s webinar.
Currently, we’re looking at an example of the GoToWebinar Attendee Interface which is made up of two parts.
The Viewer Window on the left, which allows you to see everything the Presenter will share on his/her screen, and the Control Panel at the right. Within that Control Panel is how you can participate in today’s event, so let’s look at that.
SLIDE 3 – HOW TO PARTICIPATE TODAY
Clicks 1, 2, and 3
By clicking the orange arrow, you can open and close your control Panel
Click 4
From the View Menu you can also set the Control Panel not to auto-hide when inactive if you prefer to keep it always open.

Gary Gillett - Gillett Law Office, LLC
Brad Toft - Restaurant Programs of America
BREN CUENI - Ohio Restaurant Association
Before we get started we would like to see who is on the call - our first poll question is
What is your position in your company? Choose main role
We also want to know - Have you experienced any liquor violations?
Gary Gillett is our first speaker
Gary received is undergraduate degree from Vanderbilt University, and his JD from The Ohio State University Law School.
He has been practicing for 29 years. He has worked at several law firms over a period of 25 years before opening his own practice in 2010 in downtown Columbus. The focus of his practice has been on assisting businesses that have liquor permits; including restaurants, bars and convenience stores.
Gary has represented parties in the purchase and sale of businesses, liquor licensing and renewal matters, sales tax and audit matters, and liquor citations. His practice has also involved handling many different types of business matters including formation of businesses, and review and drafting of leases. He have also represented my clients in a variety of commercial litigation matters.
Gary is a member of the Ohio Restaurant Association and the Ohio Business Brokers Association.
Our next speaker is Brad Toft
Brad is a Senior Account Executive with Restaurant Programs of America in Cincinnati, OH.
He has been an Independent Agent since 1992 and has specialized in covering restaurants since 2008.
He is ServSafe Alcohol certified and enjoys working with the Ohio Restaurant Association in various capacities including membership development, educational events and writing articles for a’ la carte magazine
How liquor percentages determine a restaurant class code – how is this determined? A restaurant isn’t going to know how much alcohol they are going to sell.
Our last speaker is me, Bren Cueni. As I mentioned in the beginning of our webinar, I am the Manager of Member Services. I have been with the Ohio Restaurant Association since June 2012
My primary responsibilities include new member orientation, developing and implementing ORA’s Restaurant Education Series as well as leading retention efforts. I also am lead staff person on answering ServSafe questions. I have my SS Food Handler, Manager and SS Alcohol certification.
Before I talk a little about SS Alcohol program I want to know - Do you have a training / certification program in regards to alcohol?
As I mentioned both Brad & I have taken the course. The course was quite eye opening to me. The course is important but even more essential is ongoing training for your staff, e.g. are you making sure they card everyone every time? Does your staff know what to do if an altercation occurs between customers, are your servers / bartenders tracking the drinks they are serving to customers to make sure they are not getting intoxicated?
These are all examples of what you could learn by taking the SS Alcohol course.
Knowledgeable, responsible alcohol service should be a priority for every operation.
This program prepares all front of house staff to effectively and safely handle difficult situations in your operation.
The creators of ServSafe Alcohol teamed up with experts in the beverage, foodservice, medical, insurance, legal, academic and regulatory industries to develop this comprehensive program.
You can trust the ServSafe Alcohol program. It was built by the same creators as the highly regarded ServSafe food safety program, which has been protecting the industry for nearly 40 years.
A little about the program course:
It is divided in to four key sections:
Law and Your Responsibility
Recognizing and Preventing Intoxication
Checking IDs
And Handling difficult situations
What operators love about the program is that the training materials reflect real world experiences and practical approaches. You actually have scenarios that you must complete correctly to continue the training
What are the benefits of ServSafe alcohol training?
It’s convenient. Available print and online. The online class is available 24/7 to accommodate non traditional work schedules.
And, if you have some staff that take an in person class and others that take the online class, you won’t have to worry about inconsistency in education.
And to accommodate questions, bilingual service center representatives are available to assist.
So how long will the training take? Well, you have options:
The classroom session can be taught in 2 hour increments, of 2, 4 or 6 hours, depending on the level of interaction and review you prefer.
The online version takes 90 minutes to 2 hours.
And once you purchase it, you have 90 days to complete it, so you don’t have to rush through it in a few days.
There are 2 exams you can take:
The primary exam has 40 questions & this would be the exam most people would take.
And the advanced exam, for those who want to be a ServSafe alcohol instructor, has 70 questions and must be proctored.
You’ll get a 3 year national certificate once you’ve passed the exam. Like the other SS certificates it goes with the staff person / not the business.
& because you are an ORA member your price is discounted to 18.70 for the guide and the online course with either advance or primary exam is $25.50
For instructors, there are instructor tools available and there is a five package DVD set you can purchase in a bundle, or individually.
The DVD topics are:
Alcohol Law and Your Responsibility
Recognizing and Preventing intoxication
Checking ID
Handling Difficult Situations and
Evaluating Real-World Scenarios
How to order,
To get your member discount of 15% off.
However, I have great news! NRA has introduced a holiday promotion with a 30% off discount, twice the member savings – just order by the end of the year
You can also order other SS safety training products and enjoy the 15% ORA member discount via the first web address I provided.
When you purchase ServSafe products you have the satisfaction of knowing that profits are reinvested in the industry educational , outreach and advocacy programs.
Now we will take your questions. Feel free to continue sending in the questions. We will officially end the webinar at 3:00 pm but the speakers have agreed to answer all questions that come in and all will be recorded in case you need to leave.
Q: What is the score required to pass?
A: A passing score for the ServSafe Alcohol Primary Exam is 75%. This is obtained by answering at least 30 out of 40 questions correctly. A passing score for the ServSafe Alcohol Advanced, Proctored Exam (if you want to be an instructor) is 80% or higher.
Q: Will I have a better chance of passing the online class or in person?
A: Classroom and online passing rates show no variance.
Q: How can I know someone is intoxicated? What are signs to look for?
Q: How do I handle an intoxicated individual?
Q: What are the Proper Procedures to avoid issues
AFTER ALL QUESTIONS HAVE BEEN ANSWERED:
I’d like to take this opportunity to thank our speakers for providing their expert advice.
