One of my main goals in life is to teach others what I've learned about how easy it is to simplify the life of a cook. And in this video I'm going to focus on a pain free way to do just that. To simplify the life of a cook is really not hard to do… Whenever you're cooking meals such as meatloaf, spaghetti, chili, soup, and many other dishes simply mix extra that can used at a future time. This is such a wonderful strategy for several reasons including: • It's nowhere near double the effort • It really saves so much time • It can even give you nights off from cooking each and every week. I have a favorite meatloaf recipe and whenever I make it I make 75 servings. For those of you who are curious, that takes 11 lbs. of meat and with all the rest of the stuff that goes in it I have a hard time mixing it up even in my largest metal mixing bowl. When I do finally get it all mixed up I'll grab one of my cast iron skillets and fill it with the size meatloaf I want. Then I'll put that mixture in a freezer bag, making sure as much air as possible is out of it, label it as "Meatloaf" and the date. Then I'll put up some smaller bags and these will be used for things such as: • Stuffed bell peppers • Stuffed cabbage • Salisbury steak • Just scrambled with some gravy and served over rice, pasta, or potatoes These are just some of my favorite things to do with this meatloaf mixture If I'm pressed for time it doesn't take long to put the mixture in a skillet and bake. If I have a little more time available I may make one of the above dishes that requires a little more time. It's so time-saving because the majority of the work is done. When I make homemade vegetable soup I'll cook enough to put at least 2 - 1 gallon bags in the freezer and it basically gives me 2 nights off from cooking.
