Traditional recipe Greek salad (horiatiki)
1. “HORIÁTIKI SALATA”
(GREEK SALAD)
4-5 vine-ripened red tomatoes
1 red onion
1 cucumber
1 green bell pepper
150g Greek feta cheese
10 Greek olives
Greek dried oregano
sea salt
Greek extra virgin olive oil
Red wine vinegar
Cut the tomatoes into bite-sized pieces. Salt lightly. Peel and slice the cucumber.
You may also cut the slices in half. Salt lightly. Slice the pepper into rings, removing
the seeds. Slice the onion into thin rings.
2. Put the tomatoes, cucumbers, green pepper, olives and onion in a large salad bowl.
Sprinkle with oregano. Pour olive oil and a little red wine vinegar over the salad and
toss. Then place the feta cheese on top of the salad, either as a slice or crumbled.
Pour a little olive oil over the feta cheese and sprinkle it with oregano (and a little
black pepper-if you like it!). Serve along with rustic, hard-crusted bread. (You can
put a small piece of bread on your fork and dip it into the salad juices that have
accumulated at the bottom of the salad bowl – this is called “papara” and it’s
delicious!)
This salad can either accompany your main meal or it can be enjoyed as your main
meal. It can easily become a vegetarian dish or suitable for Lent by omitting the
feta.
Always prepare “Horiátiki salata” right before serving it and since it doesn't keep
well in the fridge (it gets soggy quickly), prepare as much as you need.
“Horiatiki” means "in the peasant manner" and it denotes the rustic character of
the salad with its roughly chopped, colourful vegetables glistening under the rich
coating of Greek extra virgin olive oil.
