frame of mind, with our German Menu at the Press Club! Get
a head start on the fall festivities this week at the Press Club

“Sauerbraten,”or Chicken Schnitzel with Roasted Potatoes,
with Seasonal Green Salad with Radishes. For an alternative
Deutsche dinner have a Cervelat Salad with Gherkins and
Onions, or Braised Bone Ham with Kraut. All entrees will be
served with a glass of beer, compliments of Tiger—join us
this week at the Press Club!

The Old Quarter is often called the“36 Old Streets,”because during the 15th
century there were 36 guild locations. When streets were later developed, the
guild names were applied to the streets. Though this moniker is still sometimes
used, there are now more than 70 streets in the area.
A majority of the street names in the Old Quarter start with the word“hang,”
meaning merchandise or shop. The streets were originally named for their
product, service or location. For example, Hang Bac, one of the oldest streets in
Vietnam, dates from at least the 13th century. Bac means silver, and this street
started as a silver ingot factory under the reign of Le Thanh Tong (1469-1497).
Villagers, called the“Trau Khe silver casters,”were brought in to the capital to cast
silver bars and coins. At one communal house, the silver was melted and poured
into molds. At another communal house, the molds were further processed for
delivery to the Prime Minister.
Hang Be Street, outside the My Loc Gate, was originally the street of bamboo
raft makers. Bamboo rafts were appropriate for Hanoi’s shallow rivers, lakes and
swamps, which cannot provide solid anchorage or shelter from storms. The
bamboo poles from which the rafts were constructed were sold one block east on
Hang Tre (“tre”means bamboo).
Meaning“Wooden Bridge,”Cau Go Street is located one block north of Hoan Kiem
Lake. 150 years ago this was in fact the location of a wooden bridge that crossed
a thin stream of water. Dyers from Hang Dao Street set out their silk to dry or
bleached their fabric beside the bridge. Under the French occupation, the stream
was filled in as a health measure and to increase building area. The little wooden
bridge became a regular street.
Hang Dao (Silk Street) is one of Hanoi’s oldest streets. In the beginning of the 15th
century, Hang Dao was the location of the silk dyers guild from Hai Hung Province,
which specialized in a deep pink.“Dao”refers to the pink of apricot blossoms, which
are symbolic of the Vietnamese Lunar NewYear. The demand for this special color
was so high that the fabric had to be dyed at other locations as well.
In the 19th century, Hang Dao was lined by about 100 houses, of which only
10 or so were constructed of bricks—the rest were made of thatch. By the turn
of this century, Indian textile merchants had opened shops for trading silk and
wool products imported from the West, and Hang Dao now specializes in ready-
made clothing.
These are just a few examples of the rich history and culture embedded in the
original 36 streets of Hanoi’s Old Quarter. Tune in

khu vực này có 36 phường hội. Sau này khi các khu phố phát triển hơn, tên của
các phường hội được chuyển thành tên của các khu phố. Mặc dù người ta vẫn
dùng tên gọi này, nhưng trên thực tế có hơn 70 con phố trong khu phố cổ.
Hầu hết tên của các con phố trong khu phố cổ đều bắt đầu bằng từ“Hàng”, có
nghĩa là hàng hóa hay cửa hiệu. Ban đầu các con phố được đặt tên theo loại hàng
hóa, dịch vụ hay địa điểm. Ví dụ, Hàng Bạc, là một trong những con phố cổ nhất

as a crafts area when the Vietnamese
attained independence from China in the

thời vua Lê Thánh Tông (1469-1497). Những người dân trong làng Trâu Khê được phép
di cư lên kinh thành để đúc bạc nén và tiền tệ. Bạc được nung chảy và đúc thành bạc
nén tại một đình bảng. Sau đó bạc nén sẽ được xử lý tiếp tại một đình bảng khác để
vận chuyển tới Thượng thu bộ lại.
Phố Hàng Bè, nằm gần Cửa Ô Mỹ Lộc, trước đây là khu phố của những người thợ làm
các sản phẩm từ tre nứa. Các mặt hàng từ tre nứa vốn thích hợp cho những con sông,
hồ, đầm lầy nông, không thể tạo neo vững chắc hoặc chỗ cư trú tránh bão. Các khối
gỗ lớn được bán ở khu phía đông phố Hàng Tre.
Phố Cầu Gỗ là một khu nằm ở phía Bắc Hồ Hoàn Kiếm. Cách đây 150 năm, ở đó có một
cây cầu gỗ bắc qua một con lạch nhỏ. Những thợ nhuộm từ phố Hàng Đào thường
phơi tơ lụa hoặc nhuộm vải vóc bên cạnh cây cầu. Vào thời Pháp thuộc, con lạch bị lấp
đi để xây nhà. Chiếc cầu gỗ nhỏ trở thành một khu phố sầm uất.
Hàng Đào là một trong những con phố cổ nhất. Vào đầu thế kỷ 15, Hàng Đào là khu
vực của các phường hội nhuộm vải vóc từ tỉnh Hải Hưng, đây là làng nghề chuyên
nhuộm các màu đỏ, hồng, màu hoa đào.“Đào”ám chỉ tới màu hoa đào nở, đó là biểu
tượng Tết cổ truyền của dân tộc Việt Nam. Nhu cầu vải vóc, tơ lụa có màu đào đặc
trưng này cao tới mức người ta phải nhuộm tơ lụa tại các làng khác nữa mới đủ.
Vào thế ký 19, Hàng Đào gồm khoảng 100 ngôi nhà chạy liền kề nhau, trong đó chỉ có
khoảng 10 ngôi nhà được xây dựng bằng gạch đỏ, số nhà còn lại được lợp bằng mái
lá. Cuối thế kỷ, những thương lái dệt may đã mở các cửa hàng để buôn bán sản phẩm
tơ lụa và vải bông được nhập khẩu từ các nước phương Tây. Ngày nay, Hàng Đào chủ
yếu buôn bán quần áo may sẵn.

Where do you come from, and how long have you
been in Hanoi ? I live in Paris, France, and I have been in
Hanoi since March 2012.
What is your job at the Press Club ? I’m a Management
Trainee, which consists of assisting the Restaurant Managers to
make sure day-to-day operations run smoothly. I work with all
departments to help ensure the highest standards of service.
Could you tell us a little bit about your interests
outside work ? I’m from the southwest of France, where
we have a strong culture of rugby, surf, and golf. I’ve played
rugby since I was 8 years old, and I love this sport—it teaches
a lot of respect for opponents, and I need to play every week
to de-stress a little bit. I have also surfed and played golf since
I was young, and have a golf handicap of 14.
What do you enjoy most about working at the Press
Club ? Having multicultural guests from all over the world,
and working with employees who have different cultural
backgrounds. The Press Club has a great location in the Hoan
Kiem District, the interior is indochine with all the facilities
necessary to work at the highest level.
What are your favorite food and drink at the
Press Club ? For a starter I recommend the Fillet of
Salmon with Young Vegetables with a glass of Vasse Felix
Chardonnay, Margret River, an Australian white wine. For
the main course, Grilled Beef from Australia with a glass of M.
Chapoutier La Bernadine Chateauneuf du pape (2008), and
for dessert try the Chocolate Cake—in a word, wonderful!!!
If you were writing a travel promotion for Hanoi, what
you would recommend? I would say visit Hoan Kiem Lake,
the Presidential Palace, and the Temple of Literature. Have
lunch or dinner at the Press Club.
Do you have a favorite quote or motto ? When I
was 15 years old, my teacher told me, “Impossible is not
French.” I try to remember this quote every day, because the
impossible is possible even in the worst situations.

và cộng tác với các bộ phận khác để đảm bảo chất lượng dịch
vụ tốt nhất.
Ngoài công việc anh có niềm đam mê nào khác
không? Tôi tới từ miền nam nước Pháp, nơi nổi tiếng với các
môn thể thao như bóng bầu dục, lướt sóng và golf. Tôi chơi
bóng bầu dục từ năm 8 tuổi và rất thích bộ môn này, và tôi
vẫn chơi hàng tuần để giảm stress. Tôi cũng tham gia lướt
sóng và chơi golf, từng tham gia thi đấu golf năm 14 tuổi.
Điều gì anh thích nhất khi làm việc tại Press Club?
Được tiếp xúc với nhiều khách hàng khác nhau, làm việc cùng
các đồng nghiệp tới từ nhiều nền văn hoá đa dạng. Press
Club có vị trí tuyệt đẹp tại trung tâm quận Hoàn Kiếm, mang
kiến trúc và nội thất mang phong cách Đông Dương, đạt tiêu
chuẩn quốc tế.
Đồ ăn và đồ uống yêu thích của anh tại Press Club?
Tôi thích món khai vị lườn cá hồi nướng với rau theo mùa,
kèm một ly vang trắng Vasse Felix Chardonnay, Margret
River, món chính bò nướng Úc uống với rượu vang Pháp M.
Chapoutier La Bernadine Chateauneuf du pape (2008). Tráng
miệng với bánh sôcôla – Còn gì tuyệt hơn!
Anh sẽ viết gì để quảng bá cho du lịch Hà Nội,? Các
bạn hãy tới thăm quan hồ Hoàn Kiếm, Phủ Chủ tịch, và Văn
Miếu. Thưởng thức bữa trưa hoặc bữa tối tại Press Club, và

Dine Cruise on Halong Bay, lighting up Surprise Grotto with a black tie affair
that ranks as the most glamorous gathering onVietnam’s social calendar.
The 8th Annual Wine Cruise drew passengers from as far afield as Berlin
and the United Kingdom for this event, though most of the 68 passengers
hailed from Hanoi. The crowd embarked from all walks of life. There were
teachers form the United Nations School, the chancellor from the German
Embassy, the Australian Ambassador, Canadian expatriates, people up
from Danang, and a lovelyVietnamese family from Hanoi whose daughter
recently returned from study abroad in the United States.
The annual feast in the grotto was a three-hour affair, conducted by the
Press Club’s executive chef, Marcel Isaak, and complemented by a range
of wines from Chapoutier, one of 2012’s most admired wine brands.
While dining, DJ Cache from Brisbane enhanced the surreal ambiance
with jazz selections and crooners from back in the day. Meanwhile, the
recent rains trickled amongst the grotto’s crevices to underscore that
this was no usual dinner. After dinner, the passengers ferried back to the
Emeraude where DJ Cache segued from jazz to party music and rocked
the boat till the small hours. The 9th Annual Wine Cruise 2013 will be
held on May 25.

tối thịnh soạn trong hang Trống.
Những vị khách tham gia hành trình tới từ nhiều quốc gia, Anh, Đức,
Canada, từ các giảng viên của trường Quốc tế United Nations School cho
tới các chính khách đại sứ quán Đức, đặc biệt có sự hiện diện của ngài
Đại sứ Úc. Tất nhiên không thể thiếu những vị khách Việt Nam tới từ Đà
Nẵng, Hà Nội, trong đó có một gia đình dành trọn kỳ nghỉ với cô con gái
mới du học từ Mỹ trở về.
Bữa tiệc tối lãng mạn trên nền nhạc Jazz du dương trong hang Trống
do chính bếp trưởng Marcel Isaak của nhà hàng danh tiếng Press Club
chuẩn bị, với sự tài trợ của hãng rượu vang Chapoutier - một trong
những nhãn hiệu vang được yêu thích nhất năm 2012.
Sau đó các vị khách rời hang quay trở lại Emeraude, và tiếp tục tham gia

Ingredients
1 Package of Barilla Lasagna Pasta
3 cups White sauce
150 grams Mozzarella cheese, grated
80 grams Parmesan cheese, grated
8 tsp. Olive oil
2 Cloves of garlic, finely chopped
1 onion, finely chopped
10 Tomatoes, peeled, seeded, and
chopped
Oregano, Salt, and Pepper to taste
200 grams Shrimp, peeled and diced
100 grams Shallots, cleaned
20 Clams, cleaned
100 grams Crab meat, cleaned

80 gr Pho mai Parmesan, bào nhỏ

10 quả cà chua chín, lột vỏ, bỏ hạt,
thái nhỏ
Oregano, muối, tiêu vừa đủ
200gr tôm, bóc vỏ, thái hạt lựu
100 gr sò điệp, rửa sạch
20 con ngao, rửa sạch
100 gr thịt cua, làm sạch
Preparation
Pre-heat the oven to 350 degrees F (175 degrees C), and
cook the pasta according to package instructions.
Heat 3 teaspoons of Olive Oil in a skillet, add Garlic and
Onions, and sauté. Add Tomatoes and Oregano and
simmer until the Tomato Mix reaches a thick consistency.
Season with salt and pepper.
Heat 3 teaspoons of Olive Oil and fast-sauté the Seafood.
Add the Tomato Mix, simmer for 2 to 3 minutes, then
remove from heat.
Take a sizable baking dish and coat with 2 tablespoons
of Olive Oil. Layer in White Sauce, Pasta, Tomato Mix,
Parmesan Cheese, White Sauce, Pasta, Tomato Mix,
Parmesan Cheese, White Sauce and Mozzarella Cheese.
Bake in the oven for 45 to 50 Minutes, remove and allow
to cool. Serve with Seasonal Mixed Garden Greens and
Balsamic Dressing.

phút sau đó để nguội. Dùng với sa lát rau trộn với sốt
dầu dấm.

Yoga is more than a simple exercise program, or a series of complex
stretches. This system of philosophy, balance, and conditioning
is believed to predate recorded history. The earliest archeological
evidence of the existence ofYoga was found in stone seals excavated
at the site of the Indus Valley Civilization that depicted Yoga-like
postures from around 3000 B.C. According to Indus archeologist
Gregory Possehl, an Indus valley archeologist, the most famous of
these seals, known as the Pashupati Seal, depicts the Lord of the
Animals seated in a Yoga posture.
A sage in the 15th century India initially created Hatha Yoga, the
form that most Westerners are familiar with. The word “Hatha” is a
compound of“ha”and“tha,”which mean sun and moon.
This philosophy traveled to the West when disciples of Swami
Vivekananda and others traveled to areas of Europe and America
where yogic concepts were met with enthusiasm. In America,
schools teaching the principles of Hatha Yoga became a beloved
trend in the 1960’s, and schools are easily found in every major city
in the United States.

Theo nhà khảo cổ học người Ấn Độ Gregory Possehl, dấu đá nổi tiếng
nhất là dấu Pashupati, thể hiện Chúa tể muôn thú đang ngồi trong
tư thế của Yoga.
Vào thế kỷ 15, một nhà hiền triết ở Ấn Độ đã thiết lập nên HathaYoga,
đây là loại hình rất phổ biến với hầu hết người PhươngTây.Từ“Hatha”
bao gồm“Ha”là Mặt trời và“Tha”là Mặt trăng.
Phương pháp này đã được truyền bá tới phương Tây khi các học trò
của Swami Vivekananda và những người khác đi qua Châu Âu và
Châu Mỹ - những nơi tiếp nhận Yoga một cách hào hứng nhất. Tại
Mỹ, các trường dạy môn Hatha Yoga trở thành xu thế được yêu thích
vào những năm 1960, và cũng có thể dễ dàng tìm thấy những trường
kiểu này trong các thành phố lớn của Hoa Kỳ.
Ngày nay, Yoga đã vượt qua biên giới của văn hóa và ngôn ngữ.
