This Year, Give the Gifts that Last a Lifetime

The Christmas season is here again, with twinkling lights, ringing
bells and Christmas music, reminding us of the season of good cheer
and the joy of gift-giving.
But in many homes this year, the lights of Christmas may
not seem so bright because of the turbulent economic times our
world faces. The tree may not have the size and number of gifts
as in recent times. Yet perhaps by reflecting on what is really meaningful and matters most
in life, Christmas 2008 can be one of our brightest in memory. It is the joy and cheer of past
Christmases that bring fond memories – not the size or number of gifts we received. Bob Hope,
who lived his life spreading cheer, said, “When we recall Christmas past, we usually find the
simplest things, not the greatest occasion or gifts, give off the glow of happiness.”
One of the fondest memories I have of Christmas was when our family went to our ranch
in Colorado. Our second grandchild, Chase, was only a couple of months old, and we were
so excited to spend a few days together with our growing family.
The night we got there it began to snow and it snowed all the next day, putting down over
a foot of snow. The lights on the tree blinked, the fire in the fireplace glowed, but it was the
glow of the hearts I remember most. Oh, we had gifts, but I cannot remember one of them;
we even had a sleigh ride with horses and bells. But it was little Chase – buried under the
blankets, not able to see or speak of the beauty of a white world, with only us to enjoy –
that was giving all of us a special glow. It was our 3-year-old grandson Parker, gazing with
wide-eyed wonder at the little snowmen casting their different shapes in the shadows of
the dark forest, who caused our hearts to be filled with cheer. It was the family together –
forgetting the daily grind, creating memories with picture taking and sharing the moment –
that created the gift that will last a lifetime for me.
As we reflect on the past, is it the size or quantity of gifts that bring our fondest memories
of Christmas? Or was it the gifts from the hearts that glowed with love, peace and joy for
all to enjoy?
I would like to offer another way to make this Christmas brighter, and that is by giving

n the year almost past, hope sometimes
took a beating. Hurricanes Ike and Gustav
pounded the Gulf Coast... home foreclosures
set new records... financial markets crumbled...
and a tumultuous presidential election was
finally decided. Whether or not your candidate
won, it’s time to put aside the negatives of
2008 and focus on something we can all control:
creating hope in our lives and the lives of those
around us.
All of us in North America and around the
world have been through a lot this year, and
that makes it even more important to stay
focused on the positives. In pursuing our life
purpose and wellness journey, we can find new
reasons to celebrate this “Season of Hope.”
As we look forward to 2009, share with us
some of the bright, hopeful spots from the year
almost gone. Some are small, personal stories
of faith; some are headline items on a grander
scale. All are reasons to hope.
Volunteers: shelters from the
storms of life
No one gives volunteers billion-dollar bailouts,
but their contributions number in the billions:
8.1 billion, to be exact. That’s the number
of hours volunteered by people of generous
spirit throughout the year, as they bail out
those less fortunate.
There are some 61 million volunteers in the
United States alone, according to the
Corporation for National and Community
Service. These kind souls spent all those
hours this year fundraising for others,
collecting or serving food, donating
general labor, and tutoring or teaching.
The top places for people to serve? Religious
organizations head the list by a big margin.
Storms of nature brought out some of the
best in the human spirit in 2008. Thanks in
part to volunteers, and to those who contribute
money, the American Red Cross was able
to deliver needed services, food and supplies
to legions of people harmed by Hurricanes Ike
and Gustav. In Louisiana and Texas alone,
the Red Cross provided:
• Over 12 million meals and snacks
• Overnight stays in shelters for more
than 384,000 people
• Over 100,000 personal item kits
(soap, toothpaste, etc.)
• Over 100,000 clean-up kits, containing
disinfectant, mops and buckets
• Mental and physical health services
to more than 80,000 people.
“These kids today:”
doing good things
There are always young people with selfless
hearts who do the right thing just because it’s
the right thing. Here are just two examples:
• “National Day of Encouragement,”
on September 12, was begun in
2007 by some high school students
in Alabama. They picked the day as
a positive contrast to the World Trade
Center bombing of September 11.
Feeling that the best way to address
modern problems is through positive
words and deeds, the teens organized
community efforts. This year, the focus
was conducting blood drives, sending
care packages to hurricane victims and
first responders, and sending “encourage-
ment cards” for military personnel.

• Canadian Cultivating Peace Project
helps students in secondary schools
throughout Canada support aspects
of working toward peace. Founded on
understanding based on education, the
program encourages students to study
topics like sustainable development and
fair trade. As part of the program’s
outreach, four 11-year-olds traveled to
Cairo, Egypt to work with students from
eight European, two South American,
one Asian and two African countries.
Good news about good health
There were big stories in health news, of
course, including breakthroughs in treatment
and prevention of cancer, heart disease and
diabetes. There was also news about ordinary
habits, though, that could make a difference in
small, everyday ways. A few examples from 2008:
• Eating a small piece of dark chocolate every
day may be very heart-smart. According to
a study in the Journal of Nutrition, Italian
researchers surveyed over 4,800 people
to conclude that dark chocolate can greatly
reduce the inflammation that leads to
heart disease.
• Broccoli could be a life-saver for those with
COPD (chronic obstructive pulmonary
disease, the fourth leading cause of death
in the U.S.). An antioxidant compound
in the crunchy green vegetable was found
to help offset the effects of the disease,
according to the American Journal of
Respiratory and Critical Care Medicine.
• Green tea might actually protect against
Alzheimer’s and Parkinson’s disease.
German medical researchers found that
an antioxidant in the popular brew hinders
development of a toxic protein common to
those with the two diseases. Their findings
were published in the scientific journal
Nature Structural & Molecular Biology.
“Hope” itself an antidote
to depression
When it comes to fighting depression, hope
itself may be the newest wellness discovery.
In a 2008 study by researchers at Ohio State
University, a small sample of people with
symptoms of depression was observed. Half
the group underwent “hope therapy” – eight,
two-hour group sessions in identifying goals
and working on self-motivation. The other
half did not. Those who went through the
hope therapy reduced their symptoms
of depression.
One happy result of high prices
Thousands of people throughout North America
found new ways to conserve resources this year.
Here’s just one:
A retired California man helped
promote “Bike to Work Day” in Silicon
Valley. The man had been distributing
free bumper stickers for years that urge
“Don’t Be Fuelish!”, and when gas prices
shot up, he teamed with the Silicon
Valley Bicycle Coalition. Participants
in Bike to Work Day received restaurant
and sports equipment coupons to encourage
the healthy, energy-efficient habit.
Clearly, as these few items illustrate, there
is much to cheer in the events of 2008. We
share with you the hope that 2009 brings
even more.

or some people, the winter
months bring mood changes
that are seasonal but have little
to do with the spirit of the holidays.
These people may seem sad because
they have SAD: seasonal affective
disorder. Also called seasonal
depression, this condition is often
blamed on exposure to less sunlight
during shorter days and colder
winter temperatures.
While studies continue to find the causes and
treatments for SAD, one thing is clear: People
who have this mood disorder show symptoms
that are very much like depression.
Does SAD affect someone you know?
Symptoms of SAD, according to the American
Psychiatric Association, can include:
• Excessive sleeping, overeating and weight
gain during the fall/winter months
• Extreme fatigue or inability to keep
up a normal schedule
• Feelings of sadness, loss of feelings,
apathy and irritability.
That last item is especially interesting
to medical professionals like me who pursue
the connections between mood troubles
and B vitamins. As you may know, studies
indicate that people with a B-12 deficiency
can experience symptoms including mood
swings, mental confusion, forgetfulness and
even psychotic behavior, like seeing and/or
hearing things.
For some time, evidence indicated that it was
older adults who tended to have Vitamin B-12
deficiencies, but now we know more. As I wrote in
the VitaJournal last month, one study showed that
people as young as 26 may be just as lacking in
B-12 as some people over 65! This study, published
in the American Journal of Clinical Nutrition,
went on to say that regardless of age, those who
didn’t supplement with Vitamin B-12 were twice
as likely to be deficient as those who did.
A disorder that favors women
and younger people
Given the new evidence about young people
and B-12 deficiency, it’s important to know
one more thing about SAD: it tends to affect
more women than men, more younger people
than older ones. So if you or someone you

10. With the economic turmoil swirling around
us, it’s natural to worry about your personal
finances. Many people are already on a
limited or fixed income. But by taking steps
to cut spending, and by following a sound
budget and savings plan, you’ll be well-prepared
to stand on solid financial ground in 2009.
First things first: create a budget
The first step to getting your finances in order
is to create a budget; this will help you figure out
how much you can reasonably spend, and how
much you can save. (Of course, you’ll especially
want to track and control your expenses during
the holidays.) Here are the budgeting basics:
1. Total your monthly income.
2. Subtract your monthly expenses – this
should include house payments, car
payments, utility bills, insurance, etc.
3. Allocate money for savings, groceries,
fuel, entertainment, etc.
4. Keep track of your spending and review
your budget every month to see where you
can make any necessary modifications.

recommend that you
have enough savings to
cover expenses for at least
three months. But don’t stop
there if you can do more!
• Allocate a set amount of money to
contribute to a retirement plan each
month (10% of your income is
recommended). If your employer

by a variety of financial institutions
including banks and credit unions.
• Have your employer direct-deposit a
designated amount from each paycheck
into a savings account. This will give
you a nice buffer for those unexpected
expenses like home and auto repairs.
• Create a special savings account for
birthday and holiday gifts.
Easy ways
to cut corners
By making some simple changes, you can
easily cut corners just about every day. Here
are some pointers for keeping more of your
hard-earned money:
• Shop smart. Check grocery ads each
week to find the best deals on food. Then,
prepare a list and stick to it when you’re in
the store. Whatever you do, don’t go to the
store hungry! Also, clip coupons, buy store
brand products, and avoid pre-packaged
foods, which are often more expensive,
not to mention unhealthy. Buy toiletries
and cleaning supplies at discount stores,
as they tend to cost more at grocery stores.
• Cut out the extras. Take a look at your
monthly bills. Paying for cable TV that
you seldom watch? Eating out too often?
Not reading the magazines you’re paying
for? Cut out the things that you really
don’t need and you’ll find yourself with
extra money each month. These can
include cups of joe at the coffee shop
or movie rentals. Brew coffee at home
and check out movies for free at your
local library.
• Fight impulse spending. It’s easy to
buy on a whim. Something catches your
eye and suddenly you’re spending your
grocery money. If you think it’s something
you absolutely can’t live without, put it
on an “impulse list” and wait 30 days. If
you still want it after 30 days, shop around
until you find the best deal. Ideally, wait
until it’s on sale.
You don’t have to be a financial wizard to
manage your money wisely. By sticking to your
budget and making some simple changes in your
lifestyle, you can rest a little easier about your
financial future.

experiences an allergy attack when the tiny cells
that line the sinuses burst. These are called “mast
cells” and they are filled with histamines, the
substances that cause allergy symptoms. Pollen
and other allergens rupture these cells and release
the histamines in large amounts. Anything that
stabilizes these cells and keeps them from burst-
ing gives welcome relief from allergy misery.
What scientists are learning is that the oil
from perilla seeds is a powerful anti-inflammatory
and antioxidant. It not only reduces inflammation
in the sinuses, but in all areas where mast cells
release inflammatory histamines: the sinuses,
lungs, joints, intestines and skin. So, perilla

tions emerged as many patients contracted serious

T
his is the time of year
when holiday parties and
family gatherings multiply
our opportunities for fun, and also
for overindulging in one of the biggest
threats to good health: refined sugar.
Since 1983, the individual consump-
tion of refined sugar in the United
States has increased almost every year,
to an astounding 160 pounds. As the
“no-nutrient” additive that’s hidden in
many of our day-to-day foods, sugar is
harming our health, and we need to
do something about it.
As you may know, sucrose (the white stuff used
in baked goods and candy bars) has no real
nutritional value. It was created for our taste
buds, and boy was it a huge hit! Unfortunately,
we tend to consume entirely too much of it, and
we pay a heavy price. In fact, overconsumption
of sugar can lead to a number of serious health
conditions, including obesity, osteoporosis, heart
disease... even cancer – all diseases directly
affected by what we eat.
So, how much is too much when it
comes to sugar? There’s no established RDA
(Recommended Daily Allowance) for sugar;
however, according to the United States
Department of Agriculture, no more than
10 grams should be consumed each day. Many
popular kids’ cereals have between 12 to 14
grams of sugar in a single serving – which
exceeds the daily limit in just one sitting.
Cutting back on sugar may not be easy,
especially during the holidays, but it is a
positive step towards your own wellness!
Here are seven helpful tips
to reduce your sugar intake:
1 Read the label. Look for “sugars”
to see the amount in grams per serving.
If you don’t see it listed, look at the
“ingredients” section. Can you find any of
the following terms: Sugar, corn sweetener,
dehydrated cane juice, dextrin, dextrose,
glucose, high fructose corn syrup, fructose,
lactose or sucrose? These are just a few
synonyms for sugar. Avoid foods that
place these names close to the top of the
ingredients list. Choose foods that are
low in sugar and high in fiber or protein,
which will give you energy and keep you
feeling full.
2 Eat fruit. If you are craving something
sweet like a candy bar or dessert, grab a
piece of fruit instead. It may not sound as
appealing, but fruit contains natural sugar
that will satisfy your sugar craving. It also
contains fiber, to help slow down the
absorption of sugar in your body and
stabilize your blood sugar.
3 Drink club soda.
Whether you call it
“soda pop,” “soda” or
something else, call
these sugary soft
drinks off limits.
Just one can of cola

of sugar. The water
in soda pop is so
sugar-concentrated it

satisfying thirst. If
you really like the

ynn is a real go-getter.
She has an effervescent,
outgoing personality and an
incredible zest for life that people
immediately respond to. The always-
vivacious Lynn recently celebrated
her 60th birthday in high style with
a Texas-themed birthday party that
included friends, family and her
“boys” (two Maine Coon cats).
Lynn became a flight attendant when
she was 18 and now 42 years later is still
flying the friendly skies. Her first job was
with TWA Airlines and then she moved
to Southwest Airlines in 1992. Currently
based in Houston, Lynn is a whirlwind
of energy who easily keeps up with much
younger colleagues.
Lynn has also recently developed a profitable
sideline activity as an Affiliate Member.
She has taken on this new challenge with
the same boundless enthusiasm that she

n life, inevitably, we
will face circumstances
and events that will
challenge our emotional
health and well-being.
Sometimes they are small
frustrations and disappoint-
ments, such as struggling to
lose weight only to regain it, or getting overlooked
for a promotion at work that you felt you deserved.
Other times the problems we face are
deep, gut-wrenching traumas. Many people
may be facing or have faced financial losses,
a marriage breakup, debilitating disease
or perhaps the untimely loss of a loved
one. When these problem situations happen
to us, we have a choice in how we react.
We can resist and become frustrated, bitter,
and exhausted by spending all of our energy
regretting or longing for the past. Studies have
shown that continually feeling angry, frustrated
or depressed by events beyond your control is
extremely unhealthy. If you have a hard time
going with the flow or facing the facts, you
might be putting yourself at risk for serious
health problems.
On the other hand, we can deal with our
disappointments and circumstances by
developing acceptance. The concept of
acceptance is powerful. It’s about coming
to terms with reality, no matter how unfair
or unpleasant it may be. Practicing acceptance
can help ease the tension and stress, while
allowing us to see our situations more clearly.
Release the feeling of powerlessness
In life you will face circumstances that you
cannot control. Feeling powerless is actually a
control issue. You will need to recognize that
there are people, problems and things that are
uncontrollable and unchangeable and out of
your power to completely affect or change.
When you feel out of control and powerless,
remember by accepting what IS at the moment,
you can rely on God for strength and power.

precious. It’s the time
to celebrate a blessed
birth that occurred in
very humble surroundings,
a birth that gives us cause for hope and love
every day of every year.
This is also the time to ask an important
question: Will your new year of living be
shaped by the vision you believe God has for
your life? Specifically, will your days in the
new year be purposeful, and centered on what
is truly important?
As the verse from Habakkuk (above) states,
“Write the vision and make it plain.” Here,
God was instructing the prophet Habakkuk
to literally write down His words of revelation
so that they would be clear to all. The phrase
“...that he may run who reads it” suggests
a herald, going from place to place with
a message so that others can see it.

What will be your message to yourself and
to others to see you through 2009 with
righteousness and faith? There is power in
writing things down, and I encourage you
to do so. If you’re not certain how to begin,
I have some ideas that may help.
First, make an appointment with yourself:
write a note on your calendar on a specific
day and time. This appointment is special;
it’s when you sit by yourself and focus on the
happiest or most important aspect of what it
means to you to have a relationship with God.
The next step involves a bit more writing. Think
about a time when someone in your life really
made you feel loved, and gave you hope when
you needed it most. Write this down. Then,
think of a time that you were able to share hope
and love with someone else. Write this down.

God has a plan and a purpose for each and
every one of us this coming year.
You might want to keep these special writings
in a journal so you can turn to them when
needed. Having this type of journal helps me
return to the basics that guide us throughout
the year: the love of God, our relationship
with Him and our relationships with others.
These steps will help put you in a spiritual,
thankful frame of mind, and will prepare
you to write down your own vision for 2009.
A life of purpose, day after day
What are your goals for living out God’s
purpose for you in the new year? These might
involve short-term goals, such as acting on
the Golden Rule with others. Or perhaps you’re
working towards a long-term goal, such as working
through your church or civic group to improve
the lives of those less fortunate. The important
thing is that you reflect on how your life can
embody God’s purpose for you in small,
everyday ways.
By developing your personal, spiritual
vision for the new year, you’re really stating
your life purpose. Put another way, it’s your
“mission statement:” for what purpose did
God put you here?
God has a plan and a purpose for each and
every one of us this coming year. With faith,
hope and love, we can look forward to the
challenges of the future without fear. Whatever
we take on, whatever 2009 may bring, we are
not alone. God will be with us.

Do happiness and good health go hand-in-hand? That’s what researchers at the Centre for Behavioural Research
in Cancer set out to find. Their study, published in the September/October issue of the American Journal of Health
Promotion, showed that happiness and life satisfaction can have a positive effect on good health.
In 2001, 9,981 adults aged 18 years and older were asked to report on their health (self-rated as excellent, very
good, good, fair or poor); if they had any health conditions that limited activity; and to assess their physical health.
A follow-up survey was conducted two years later.
Good health was reported 1.5 times more by adults who indicated they were happy most or all of the time than
by those who reported being happy only part or none of the time. Life satisfaction was associated with better
health in the initial survey as well as in the follow-up survey.
“Everything being equal – regardless of your age, gender, whether you smoke, drink or exercise, if you’re happy and
satisfied with life now, you’re more likely to be healthy in the future,” said lead study author Mohammad Siahpush,
Ph.D., University of Nebraska Medical Center College of Public Health.

Longevity is associated with “being conscientious, emotionally stable, and active,” according to the National
Institute of Aging. A study published in the July/August issue of Psychosomatic Medicine researched this link
between personality traits and lifespan.
Data was taken from the Baltimore Longitudinal Study of Aging (the longest running study on aging), to assess
the personality traits and longevity of 2,359 people.
Personality traits that were linked to a longer life included emotional stability, organization, discipline,
conscientiousness and resourcefulness. Traits linked with a shorter life included depression, anxiety, anger
and emotional instability.
WINTER BLUES LINKED TO BRAIN CHEMICAL LEVELS
Toronto, Canada
Using positron emission tomography (PET) technology, researchers at the Centre for Addiction and Mental
Health in Toronto found that levels of serotonin (a mood-altering brain chemical) may be lower in the fall
and winter. Because serotonin helps regulate mood and energy levels, this may help researchers understand
seasonal affective disorder and other seasonal mood changes.
Study author Jeffrey Meyer said that this discovery is “an important lead in understanding how season
changes serotonin levels. This offers an explanation for why some healthy people experience low mood
and energy in the winter, and why there is a regular reoccurrence of depressive episodes in fall and winter
in some vulnerable individuals. The next steps will be to understand what causes this change and how
to interfere with it.”

Peggy doesn’t do things halfway.
Not long after her very first hike
along the Appalachian Trail in her
50s, she hit the adventure trail for a
seven-day trek. She often hikes with
a 40-pound pack on her back. To
celebrate her 60th birthday, she
jumped out of a plane at 10,500
feet to skydive. And when it comes

Winter can be loads of fun – the perfect time to bundle up and spend the
holidays with family and friends. But the fun can quickly disappear if you’re
spending the days in bed with a head cold – or worse. With a few sensible
precautions, you can make the best of this winter without the headache.
Here are four tips to keep you healthy:
1. Dress for the weather. It’s important to dress warmly to
avoid serious health conditions such as frostbite and hypothermia
(when the body’s temperature drops far below normal). Make sure
to select the right garments to face your day:
• A hat. Since body heat is lost through the head,
a hat that covers your ears is best for keeping warm.
• Mittens. Gloves are fine, but mittens provide even more
heat for your hands.
• Boots. Waterproof, insulated boots can help maintain your
footing in ice and snow, and keep your feet warm and dry.
2. Recognize the symptoms of hypothermia or frostbite.
• Hypothermia. Confusion, dizziness, exhaustion and
severe shivering are all symptoms of this condition.
Seek medical attention immediately if you experience
any of these symptoms.
• Frostbite. Gray, white or yellow skin discoloration,
numbness or waxy-feeling skin – are all signs you
may have frostbite. Seek medical attention immediately.
3. Be cautious when traveling. Winter weather and holiday
traveling can be a dangerous duo. Keep the following in mind:
• Try to allow extra time when traveling so you are not
rushed on the road.
• Check weather conditions and heed travel advisories.
• Keep a survival kit in your car in case you run into
a winter storm. This kit should include blankets, food,
flares, gloves and a first aid kit.
4. Don’t spread germs. It’s important to take simple
measures to stay healthy and not get others sick:
• Cover your mouth and nose when you cough or sneeze.
• Wash your hands often with anti-bacterial soap.
• Stay home from work when you are sick and see
a healthcare provider if your condition worsens.
With these basic tips we can all keep the fun in winter, and leave danger
and illness out in the cold.

Lose the Sugar
Let these tasty alternatives make holiday treats healthy

Many of us unintentionally leave our healthy diet goals by the wayside
when presented with traditional, delectable sweet treats so synonymous
with the holidays. After all, isn’t that what New Year’s resolutions are for?
What if we could still enjoy those wonderful tempting delights by
decreasing the sugar without sacrificing any of the sweetness or flavor?
Try the recipes on this page that use these all-natural sweeteners,
and have little or no adverse effect on your blood sugar.
Agave Nectar: With its honey-like consistency, this low calorie
sweetener is safe for diabetics and is 1.4 times sweeter than sugar.
Stevia: This South American herb is 100 times sweeter than sugar,
with zero calories. Stevia comes in liquid and powder form, and is a great
natural sweetener to replace the sugar bowl for tea and coffee. A little
goes a long way!
Xylitol: A natural sweetener extracted from plants. Xylitol looks
and tastes like sugar yet it has no calories or effect on your blood sugar.
It even helps to protect the enamel on your teeth! It can be used
cup-for-cup in place of sugar in any holiday recipe!
With a few simple modifications to your existing recipes you can still
enjoy the holidays, without the anxiety of making that looming
New Year’s resolution!

Almond Torte Cookies
DIRECTIONS
Mix all ingredients together. Roll into little balls and make
a thumb print. Place a bit of jam in the center.
Bake at 350 degrees for 15 to 20 minutes.
INGREDIENTS
½ cup oat flour
½ cup brown rice flour
1 cup ground raw almonds
½ cup agave nectar
2 Tbsp. cinnamon
½ cup canola oil
1 cup ground rolled oats
Jam of your choice

Rice Pudding
DIRECTIONS
Place all ingredients in a pot and bring to boil. Reduce heat
and simmer, stirring occasionally. Continue cooking until raisins
are plump, coconut is soft and most of the liquid has evaporated.
Taste and add more sweetener if necessary. Yields six servings.
*Coconut water is simply the liquid inside a coconut. You can buy it in the refrigerated
drinks section of the health food store. You can often find fresh young coconuts in the
health food store or in Asian markets. Cardamom (or cardamon) is a pungent and
aromatic spice that is native to India and Southeast Asia. The powder is the most used
form in cooking and can be found in almost any grocery store.
INGREDIENTS
2 cups leftover, cooked rice
1-2 cup coconut water*,
rice milk or water
1 cinnamon stick or
1 tsp. ground cinnamon
10 cardamom pods or
1 tsp. ground cardamom*
½ cup raisins
½ cup shredded coconut
2 Tbsp. raw honey or maple syrup
Raw Chocolate Truffles
DIRECTIONS
In a food processor fitted with the S-blade, process cashews,
melted cacao butter & agave nectar until smooth. Add the
remaining ingredients and process until well mixed and smooth.
Chill in freezer for 20-40 minutes. The more chilled the mixture is,
the easier it will be to roll into truffles. Once chilled, roll with your
hands into balls and then roll into your choice of shredded coconut,
raw cacao nibs or raw cacao powder. Store in refrigerator! Enjoy as
you wish, these truffles are GUILT FREE and GOOD FOR YOU!!!
INGREDIENTS
½ cup Raw Cacao Butter, melted
½ cup Raw Cashews
½ cup Raw Agave Nectar
1 cup Raw Cacao Powder
(or ½ cup Carob & ½ cup Cacao powder)
2 tsp. Vanilla Extract (alcohol-free) or ½ Vanilla Bean seeds
Pinch sea salt (preferably Himalayan Pink or Real Salt Sea Salt)
