1. Red Beans and Rice
INGREDIENTS:
1 package dry red beans
1 large onion
1large green bell pepper
1 lb. turkey sausage
Seasonings (black pepper, Season all, Cayenne pepper)
INSTRUCTIONS:
In large 5 quart pot pour in entire package of dry beans then fill pot halfway
with water and bring to boil with stove on high. Once beans and water have
come to a boil turn stove off and put lid on pot. Let beans sit overnight or
about 6 hours. Next day you will notice beans have absorbed most of water
and beans should look puffy at this point pour out water then refill pot with
water up to the level of the beans. Add onions, seasoning and sausage. Bring
pot to a boil. After the water starts to boil turn down to simmer and put the
lid on pot. Allow beans/sausage to cook on simmer for 2 hours. Be sure to
stir every 15-20 minutes to prevent sticking.
Serve over cooked rice.
