Luego se pica perejil y cilantro y se cubre el pescado con la cebolla, adornándolocon aji montaña picado a rajas de rocoto al gusto. Finalmente, se espolvorea rápidamente encima de la cebolla un poco mas de sal y se exprimen el resto de los limones. Se sirve sin demora, pues el cebiche se marchita. Se adorna con lechuga, camote (batata) asado o sancochado y también dos choclos (jojoto).
