4. LOCAVORE:
POKE BOWLRECIPE COURTESY OF DA KINE POKE
By Orlando’s locavore, Misty Heath
As photographed by Kimberly Jefcoat
Summer has hit The City Beautiful
in full force. Between furiously
applying SPF 100+++ and
standing directly in front of an
A/C vent (naked), no one has the
time or energy to cook in a hot
kitchen.
Da Kine Poke serves up great
options and an affordable price.
One of the first poke options
on the Orlando food scene, Da
Kine has expanded their tasty
operations, with four locations
throughout the region.
Bungalower’s staff pick is the
El Diablo bowl which has the
perfect blend of fresh ingredients
with spicy sauces (extra spicy
mayo, please). It’s the perfect
summer dish that you can make
without working up a sweat.
INGREDIENTS:
4oz Ahi Tuna, 3/4-inch cubed (raw)
2 T sliced scallion
2 T puffed rice crisps
1 T crispy fried onions (French’s brand)
1 T spicy soy (mix sriracha & soy)
1 T spicy mayo (mix mayo, sriracha,
squeeze of lemon)
1⁄2 avocado, sliced
1 cup seasoned sushi rice (see pro tips)
Sriracha sauce
Lemon
ASSEMBLY:
In bowl mix first 4 ingredients with spicy soy sauce. In serving dish, spoon over rice, add crispy onions,
drizzle spicy mayo, layer on the avocado.
PRO TIPS:
• Super-fresh fish is a must. You can buy fish by the pound from Da Kine Winter Park or check
out your local fish market. ie. Lombardi’s or Lighthouse
• To make perfect sushi rice, rinse the grains until the water runs clear and cook it off according to
the directions on the package. Cool to room temperature, add a bit of salt and sugar, then hold
at room temperature and top with furikake - which you can get at any Asian market. Make it at
least an hour before serving to allow the rice to rest and to cook-off excess moisture.

Joe Fig is known for his detailed, small-scale sculptures as well as paintings and photographs of artists and their stu-
dios. Beginning with interviews of the artists and taking extensive documentary photographs, his finished works are
comprehensive investigations of the creative process, the working lives of artists, and the spaces where art is made.
Each work envisions the studio as a portrait of the artist, whether they are present or not. Among the dozens of stu-
dio portraits Fig has created are those of Chuck Close, Ross Bleckner, Kate Gilmore, Petah Coyne and Leonardo Drew.

11. I sat in the parking lot of VFW Post 4305 with the A/C on full blast
so my face wouldn’t melt. One hundred mile purposeful dive, now
I was summoning the courage to go inside. Had forty years really
passed since we’d last seen each other? The internet deluded we
were in touch. We took separate paths since school, Vojo even
into a different career. I sighed deep, checked my nose in the
mirror, then swung my big feet out of the car to trod in. Not the
first clown college alum I buried, but this one would hurt.

unSWEET TEA
It’s totally illegal to swim in
any lakes in the city limits now,
mostly because there are too
many to monitor on a constant
basis for bacteria and toxic
algae. So like, our water is too
dirty to swim in anymore.
ORLANDO 101
Did you know that every
summer a beach would
appear on the shores of Lake
Eola and locals would go
swimming and chill in the sand
to cool off each day? It was
called “Sandy Beach.”
