Spaghettini
‘Aglio e Olio’…with oil and garlic
ingredients:
1 pound spaghettini
6 to 8 cloves garlic, smashed
1/4 cup castello di poppiano laudemio extra virgin olive oil
3 tablespoons italian parsley, chopped
3 delicius anchovy fillets
pinch of red pepper flakes
salt to taste
preparation:
Bring a 6-quart pot of salted water to a vigorous boil over high heat.
Add the pasta and stir well.
While the pasta is cooking, heat a 10-inch sauté pan over medium heat and
add the olive oil.Add the anchovy fillets, sauté them until they are melted.Add
the garlic and cook until golden brown, about 2 minutes. Remove the pan from
the heat, and add the parsley and red pepper flakes. Drain the pasta and add it to
the saute pan.Toss, season with salt and pepper, and serve immediately in
warmed bowls.
tip: Reserve 1 cup of the pasta water to moisten the pasta, if desired.
