1 Large Broccoli
1 Egg
4 cups Vegetable Broth
2 medium carrots
7 small Potatoes
1 medium Onion
3 Garlic Cloves
1 Anise Star
1 Bay Leaf
1 Liter of Water
Pinch of Salt and Pink pepper
For Garnish
Fresh Parsley
Parmesan Cheese

Step 1
Roughly chop all your Veggies and add them to a large pot with your
Vegetable broth boiling

10. When the Carrots are soft, remove the bay leaf and Anise Star,
blend your soup until reach a green creamy consistency

On a small frying pan, cook one egg yolk for 2 minutes, reserve

Serve your soup in a bowl and garnish with freshly grated
parmesan, fresh chopped parsley, your egg yolk, peanuts and
almonds
