CHINESE CUISINE
BY ZHEN CAI
Many Chinese enjoy spicy food, even
believing that hot peppers are good for
their health, and more important for
them is to have a bowl of rice to start.
”Sichuan
S
ichuan provides the
spiciest cuisine in all
of China; the whole
country raves about the spicy
dishes from Sichuan. Unlike
other Chinese provinces
which specialize in spicy
food, Sichuan is known for
making its food with
(Hua Jiao). Hua Jiao is a local
Sichuan pepper which has a
numbing effect on both your
tongue and mouth.
Hunan
A
fter Sichuan, no prov-
ince in China is more
famous for its spicy
food than Hunan. Nation-
ally beloved for its cuisine,
Hunan is known for dishes
which combine vegetable oils
with marinated red peppers.
Everything from vermicelli
soup to stir-fired dishes are
prepared with peppers dipped
into oil.

POLAR BEARS
ARE DYING
BECAUSE OF
GLOBAL WARMING

A
s sea ice disappears, a refuge of
suitable habitat for polar bears and
ringed seals – key polar bear prey –
may persist in northeastern Canada
and northern Greenland.
The refuge will be supplied by ice from through-
out the Arctic – a far more diverse source than this
region experienced in the past.
A more interconnected Arctic means that pollut-

Although Arctic sea ice is projected to be all but
gone by the end of the century, research suggests

sist along northern Canada and Greenland. These
areas may provide the last outpost for polar bears
and the ringed seals of the Arctic that the bears
feed on.
The fact that the remaining sea ice will likely be
found in a patch, rather than scattered throughout
the Arctic, makes it more likely to form a viable

SEA ANEMONE IS BOTH ANIMAL AND PLANT
ANIMAL
S
ea anemones are classified
as being animals, but two
new genetic studies have
found that these water-dwelling
creatures are technically half
plant and half animal.
The discovery does not
change the classification of sea
anemones, but the studies – both
published in the latest issue of
the journal Genome Research –
reveal just how interconnected
life on Earth is.
“All animals living now,
including humans, are equally
distant (i.e. distantly related)
to plants,” project leader Ulrich
Technau told Discovery News.
“However, the sea anemones
are representatives of an animal
lineage called the cnidarians
(corals, sea anemones, jellyfish
and hydras), which branched off
very early and appear to have
retained many ancestral traits.”
Stunning Ocean Animal Photos
Technau, an evolutionary and
developmental biologist at the
University of Vienna, and his
teams determined that, remark-
ably, cnidarians use a plant-like
system to control animal genes.
For the studies, the research-
ers focused on gene expression,
which is the process by which
information from a gene is used

old. The kid is me.
My earliest and stron-
gest memory is stepping
out on the wire with the
absolute conviction that
I would walk across it.
I have already seen my
parents walk the high
wire, an act that seems
both wonderful and natu-
ral. Naturally I’m moved
to do the same.
I take a couple of steps,
and then fall. I get back
on, only to fall again.
I keep getting on and
keep falling, getting on
and falling until in a short
while I’m able to walk the
entire length of the wire.
The accomplishment
does not feel remarkable.
I don’t feel that I’ve had
done anything extraordi-
nary. It simply feels right.
