same quality of products and services for the Orlando Science Center is evident in our track record.
We are proud of our preferred status with Albin Polesek Museum, Town Manor, Orlando Museum of
Art, Holy Trinity, Orlando Harley Davidson, Bella Collina, The Orange County Regional History Center
and many other venues across Central Florida. In addition to our preferred status, we curently have
exclusive agreements with The Ballroom at Church Street, T.Pepin Events Centre, Town Manor and
the Summerlin House. Our ability to retain customers, earn referrals, and generate

4. THE PUFF STORY
This year marks the Puff ‘n Stuff Catering 30-year Anniversary. Since 1980, we have been
Orlando’s premier catering and full-service event planning company and are now the largest of our
kind in Central Florida. We’ve achieved this status largely in part to one word: Innovation. It’s
what drives our business and our team members—evidenced in everything from our
Special Event Planners and expert Chefs to our state-of-the-art facility.
In 2003, Warren Dietel had a vision for the company, so he purchased the company from
his parents and immediately set out to grow Central Florida’s premier catering operation into a
full-service event planning company. He updated the brand, and grew the business 267%
in 3 years, achieving Inc. 5000 status in 2007 and 2008.
Quick growth required rapid changes, so the growing leadership team introduced new
systems, technology and automation to maxmize effciency and create safety nets. He also
built an infrastructure to support current and future regional growth, diversified our
segment base and worked with our Executive Chefs and event planning team
to create menus for all segments and pricing levels.

13. TERMS OF THE AGREEMENT
Exclusive Rights
While we appreciate the offer to be listed as a preferred caterer, as we have discussed, we believe it
would be the best option for the Orlando Science Center to enter into an agreement with Puff ‘n Stuff
Catering as the exclusive caterer. The following page will illustrate the benefits of this option.
Term Length
5 year term commencing October 13, 2010 and expiring September 20, 2015
Governing Law
Orange County, Florida
Facility Rental Booked Events
Puff ‘n Stuff Catering agrees that all booked events as of October 13th, 2010 will be honored.
In addition, we stand ready to take immediate control of the venue catering operations as we
understand there may be complications with the current provider.
Commissions Paid to the Museum
We will pay 10% of Food & Beverage commission to Orlando Science Center. Detailed reports will
accompany the monthly payments.
We guarantee an annual minimum of $20K/year (catering only) and BEFORE repayment of capital
investments (details to follow) if we are granted exclusive caterering rights at the Orlando Science
Center.
Product Servicing Rights
Puff ‘n Stuff Catering agrees to comply with all current and future product servicing agreements.
Museum Sponsored Catering
25% Food & Beverage discount on Orlando Science Center sponsored on-premise events
(non-commissionable)
Museum Fundraising Events
25% Food & Beverage discount on philanthropic on-premise events (non-commissionable).
Café Foodservice
As discussed, we have partnered with DiPasqua Enterprises and feel they are best suited to manage
the café and their proposal is forthcoming under separate cover. Café and all related questions will be
addressed by their representatives.

We acknowledge all existing catering equipment and serviceware will be owned by the Orlando
Science Center.
We plan to utilize existing equipment and enhance by adding additional pieces.
Our current production inventory includes an extensive inventory of china, porcelain, specialty
linens, props and decor, and much more. We will elaborate and showcase this during your visit to
our commissary,

In order to produce world-class results for events at the Orlando Science Center, a number of
improvements are necessary.
One of the biggest challenges at the Orlando Science Center is the lack of a finishing/production
kitchen on the fourth floor. The following blueprint draft covers our proposed renovations to the
current staging and storage area on the fourth floor.
Puff ‘n Stuff Catering agrees to finance the capital investment on behalf of Orlando Science Center,
interest-free to be repaid as a reduction to commisions over the initial term of agreement
(i.e. 5 years).
The total capital investment is expected to be approximately $20,000. Repaid at $4,000 per year as
a reduction of our monthly commissions. For example, if the improvements cost $20,000 we would
be issued a credit of $333.33 a month for the 5 contracted years.
We will maintain the existing serviceware inventory, replacing as necessary; solely at our expense.
A mutually agreed upon inventory upon execution of this agreement will be performed. Most of the
serviceware will reside at our commissary for proper processing.
In addition, it will be helpful to find a second location on the fourth floor to create a breakdown/
dishwashing facility.

21. RECYCLING PROGRAM
In 2006, we proudly began green initiatives within our facility and upon client request off-site.
We have a recycling compactor on-site to reduce waste. During a recent public event in Winter Park,
we trained our service staff, developed the logistics, and created a recycling plan for all plastic bottles
and aluminum cans. We are consistently improving our green initiatives daily. Furthermore, our
dishwashing systems are state-of-the-art with recirculating gray water for pre-wash and scrapping.
We will elaborate more during the site inspection.
We are working with Republic Services to fine tune a single-stream recycling program that would
include recycling everything from on-site production and at off-site events by using special recycle
bins made specifically to fit on our catering vehicles.
We have agreed to support this initiative through an extensive training program with supporting
logistics. We expect to have this plan fully integrated by the fourth quarter of 2010. We anticipate
a 50% reduction in our waste currently going into the landfill.
When possible, we utilize post-consumable recycling goods for events with disposable serviceware.
However, we realize the impact created by using any type of disposable product is greater than
options to reuse. We continue to explore options for outdoor events using dishwasher safe melamine
plateware and platters, and shatter-proof glassware.

22. MARKETING PLAN
The following marketing initiatives are proposed for the Orlando Science Center:
• Showcase events will be held at The Orlando Science Center periodically through the year
to market to prospective and current clients.
• Menus will be devolped and designed specifically for the Orlando Science Center (see
venue specific samples).
• An email blast will be sent to our database of 10,000+ clients, announcing our partnership.
• Rack cards, venue specific menus, and other marketing collateral will be made available at
the venue for on-site staff to present to clients.
• An exclusive page for The Orlando Science Center will be added to the puffnstuff.com web

• A showroom/meeting room will be created on site to support client meetings.

Written policies, operating guidelines and other terms of this agreement will be communicated
company-wide. Each service team member will receive specific training regarding any special request
of your facility. We pride ourselves not only on our cuisine, but on efficiency, cleanliness, and
impeccable service. Once the contract is executed, we will schedule time on-site for our operations
leaders to walk the site to best plan for the new finishing kitchen and logistics of events at the
Orlando Science Center.
Puff ‘n Stuff Catering typically requires two hours before an event to setup and one hour post event
to breakdown and clean-up. Our service teams are trained to respect venue partners just as if they
are walking into a client’s home. We take pride in leaving your “home” in the same condition as we
found it.
Food safety and handling is an important consideration when reviewing the capabilities of a catering
firm. Transporting food requires extensive refrigeration to avoid bacteria growth. We currently own
seven (7) refrigerated box trucks and eight (8) smaller vans with chilled insulated boxes. From an
overall capacity standpoint, we currently average 20+ events per day varying in size from as few as
five to several thousand. As a result, we have the trained staff, experience and equipment necessary
to deliver on our commitments regardless of size and complexity. Off-premise catering and venue
management is all we do, offering years of experience handling food and service even in the most
remote of locations.
Our service captains and chefs are ServSafe Food Safety® certified and trained. Our bartenders are
ServSafe Alcohol Safety® certified and trained. These programs combine critical information, exclusive
tools, and real world resources to transofrm knowledge into action. In short, ServSafe puts the
highest industry standards to work for you every day.
