¼ cup fresh coriander, finely chopped
1 tsp fresh lime juice
½ tsp red chilli, minced (with seeds)

Combine all ingredients in medium bowl.
Season with white pepper and salt. Can be
made 3 hours ahead. Makes about 4 cups.

32. Pa n n a C o t ta . . . Heat the milk, cream, sugar and vanilla pods
500 ml cream and seeds in a sauce pan until it just reaches

chill for 30 minutes.
Once the pastry has chilled take from the fridge, place on a rich
lightly floured board and roll out to about 3mm thick. Cut the
pastry into sections that will fit your moulds with enough to
hang over the edge. Place the pastry into the tartlet mould
pressing in the edges and make sure all the edges are
trimmed of any excess pastry, do this to the amount of tarts
required. Place into the fridge to let the pastry cool and rest
for half an hour, blind bake the tarts for 10 minutes at 200˚C S w e e t Pa S t r y
