5. Vin chaud.
1. In a large pot bring to the boil:
• 750ml bottle of Bordeaux red wine
• 4 tbsp cassonade (brown sugar)
• pinch of freshly grated nutmeg
• 3 cloves
• 1 star anise
• 1 stick of cinnamon
• 1/2 tsp of freshly grated ginger
• zest of 1/2 lemon
• peel of 1 orange
• freshly squeezed juice of 1 orange
2. Turn the heat to low and simmer gently for
10 minutes. Turn off the heat and leave
to infuse for about 30 minutes to an hour.
3. Just before serving, reheat gently until hot,but not steaming.
4. Serve in heatproof glasses and add a slice oforange, peel removed, and cut into 4 quarters.
Serves 4.
