Diet Assessment Part 2 Observations
I think it is very beneficial for everyone to do a 3-day diet record. It makes you accountable for
what you ate and you can look back on every little detail and calorie that you consumed. I thought it was
a lot harder to do than anticipated. I didn’t take my diet record with me to school, I just filled it out
every time that I came home. The days that I chose to record may not be the best examples of my actual
diet because I usually bring a lunch to school, but one of the recorded days, I was unable to. It was also
hard to estimate exact amounts. Because I know the procedure, I made sure to include ingredients in
most of my food items, and not just the name of the completed item itself. Doing this made it hard to
estimate portions, but in the long run it allowed Alysse to be more accurate and have an easier time
imputing the data. After reviewing my 3-day diet record, it made me realize how busy I am and
reminded me that I needed to spend more time preparing food. Not only will it help me to have a more
rounded diet, but it could help me to save money.
Alysse did a great job filling out her diet record. Because she knew what I was looking for she
made sure to be very specific and detail oriented with sizes, brands, etc. This made conducting the
interview very easy. It went quick because there were not many questions or holes in the record that I
needed to clarify. An example of one thing that I had to clarify was the form that she consumed her
chicken; skin or no skin, white or dark meat. I am almost certain her diet record was accurate, not only
because she is in the health profession but because she was interested to know how her everyday
eating habits hold up to the NutritionCalc Plus recommendations. I noticed a big difference in
confidence and clarity between Alysse and my part 1 client. Alysse was much more confident in
2. answering any question I had and was also much clearer on all the details of her diet record. My guess is
that because she is in the class and is familiar with the project, this made it much easier for her.
There was once again, many different foods that were not in the NutritionCalc Plus program.
This makes it very hard to get her 3-day diet record accurate. For example, Alysse had Kambucha one of
the days. This was not in the program. Therefore I had to choose something else that was similar
nutrient wise and calorie wise. I chose to find a green smoothie and match the calories. Besides not
having all the details and exact foods, the program is very easy to use and I love the tables and
information that you get when its all done. I like that the program allows you to input the daily exercise
as well, because Alysse exercised every day and that is important when considering her dietary needs.
For me, part 2 was much easier because it is the second time doing this in less than 3 weeks. I
did not face as many challenges as part 1. To aid in my ease, Alysse doesn’t take any supplements and
her daily exercise is something that I considered when seeing she was in the higher range for daily intake
of protein. Most of the challenges that I faced were with the program. Alysse was almost too detailed in
her food log. Times when she gave me exact brands of food, they were not in the program, so I had to
make an educated guess.
Not only is Alysse a Nutrition and Food science major, she cares about her health, what she eats
and is very active. She is very well rounded in her food intake. She doesn’t drink much soda or take in
discretionary calories. For fruit, she is consuming .2 cups more than the recommended amount, and
barely misses the mark by .4 cups with vegetables. Her percentage of total calories for each of the
macronutrients is perfectly within the range of what is recommended; 21% for protein, 50% for
carbohydrates, and 23% for her total fats. One major flaw that I saw, was her lack of overall calories per
day. She eats a lot of small portions, multiple times a day. The program recommended 2300 calories a
day, but when I looked at a couple different websites, it recommended closer to 1900 calories per day.
3. Even with this lower number, Alysse only consumes an average of 1283 calories per day. I suggest she
increase her portion size or increases her grain consumption. This is a second place where she is lacking.
Her recommended grain consumption is 8oz per day. She is consuming an average of 2.1 oz a day. She
can do this by adding a cup of brown rice to dinner, or making a sandwich for lunch to go along with her
salad. The other food group that she is lacking in, is dairy. It is hard to get this in during the day,
especially when you are at school all day and most dairy products are highly perishable. Because of this,
I would recommend adding cheese to her salad, increasing her yogurt in her morning oatmeal, or adding
a glass of almond milk to her breakfast or dinner. Overall Alysse has a diet to be awarded. She is
complete in almost all of the micronutrients including vitamins A, B1, C, Folate, Iron and Phosphorous.
This is something that you could expect to see from someone following her career path.
