PÁRANCE (recipe)
1. DREVORUBAČSKÉ „PÁRANCE“
THE WOODCUTTER´S „TORN STRIPS“
Recept – Recipe
INGREDIENCIE INGREDIENTS
CESTO: DOUGH:
0,5 kg - polohrubá múka 0,5 kg - SEMI-COARSE FLOUR
230 ml - studená voda 230 ml - COLD WATER
1 čaj. lyžicka - soľ 1 tea spoon - SALT

PRÍLOHA: SIDE DISH:
250 g - maslo 250 g - BUTTER
zemiaky (1 plech) WHOLE POTATOES (1 baking pan)
3 cibule 3 ONIONS
slanina BACON
2. PROCESS - Day 1
1.) Put FLOUR + WATER + SALT into a bowl.
2.) Mix them together until a DOUGH peels off the bowl.
3.) Let the dough rest (in the covered bowl) in a FRIDGE until the next day (!)
PROCESS - Day 2
1.) Put the DOUGH on a desk (a wooden board) and sprinkle it with FLOUR so that it
does not stick.
2.) Cut thick STRIPES off the dough with a knife.
3.) Stretch the STRIPE to a long length.
4.) Cut the length in 2 halves (or if it is too long – in more pieces).
5.) Take 1 piece of stripe into your hands - push the stripe to be thicker along the
entire length.
6.) Make a HOLE in the middle of the stripe (with your hands) and pull the dough
apart to make 2 long thinner stripes.
Do it again with these 2 apart stripes (divide them into another 2 thinner stripes,
if they are not thin enough), or take another piece of the thick stripe and shred it
into 2 halves.
(!) They can have different thicknesses and lengths (!)
7.) Put the thin long stripes into boiling water for a couple of minutes (3 min).
Woodcutters used to make these TORN STRIPES in the nature over the fire, so they
put thin stripes quickly straight to the boiler (pot) over the fire.
3. 8.) Take the stripes out of hot water from a pot with a sieve.
9.) Put them into the bowl. Pour them with melted BUTTER.
10.) Mix them with POTATOES baked in their skin.
(!!!) Do this FIRST – it takes time to wash the potatoes in their skin + to cut them
into halves or quarters + to bake them salted (!!!)
11.) Fry the chopped ONION and BACON in a pan separately.
12.) Pour the stripes with fried onions or bacon on a plate.
The THORN STRIPES can be made also SWEET!
With jam / chocolate / breadcrumbs with sugar...
