2. Co-founders Alex Lorestani, PhD and Nick Ouzounov,
PhD were graduate students at Princeton when they
asked: why has the consumer goods industry still not
benefited from synthetic biology to the extent that
medicine has? We no longer have to slaughter a pig
and take its pancreas to get insulin, so why should we
for gelatin and collagen?
Alex and Nick developed the idea of using biological
information and fermentation technology to produce
proteins with the best properties that nature allows,
without harming animals. They successfully tested the
concept at Indiebio, a renowned biotechnology start-up
accelerator in San Francisco, in 2015.
In 2017, Geltor became the first company in the world
to ship a synthetic-biology-enabled protein ingredient,
using microbes designed to produce it. Now every step of
our production process is patented, and Geltor’s animal-
free collagen (N-Collage™) launched in April 2018.

3. Protein Engineering
Designing proteins, molecule by molecule
We search the tree of life for nature’s best building blocks and
use them to build a refined molecular palette. These molecules
are computationally optimized to produce the best protein
functionality. Making use of a protein’s natural functionality
without being constrained by its earthly abundance means we
can design the best possible materials, never before seen at
commercial scale.
Next, we engineer microbial organisms to build our designer
proteins. They act as self-replicating factories, specialized in
converting low-cost nutrients into high-performance proteins.
These cells act with breathtaking speed and efficiency under
demanding conditions.
The next step is a fermentation process similar to brewing.
This technique allows us to harvest ingredients with
unmatched speed and precision

Our ability to design proteins through the most
sustainable methods should open various doors through
Geltor for manufacturers as they are urged to respond
to the changes that consumers demand. The fact that
we can fully design proteins enables us to listen to our
customers and feedback to produce targeted products
