This document summarizes three traditional Basque meals: Bakalao a la Bizkaina, which is fish gently sautéed in olive oil and dressed with a sauce of red peppers, onions, garlic, and sometimes tomato; Hake in green sauce, which is hake accompanied by a green sauce and clams served in a clay pot with a boiled egg; and Tuna pot, a popular dish of tuna cooked in a pot that can also be made with salmon instead of tuna.

1. TRADITIONAL BASQUE MEALS
We are Ekain, Ismene and Joane and we are going to talk about Basque
meals.
Ekain is going to talk about “Bakalao a la Bizkaina”.
Ismene is going to talk about “hake in green sauce”.
Joane is going to talk about “tuna pot”.

2. BAKALAO A LA BIZKAINA
Bakalao a la Bizkaina is a traditional Basque meal. This means that the
fish is gently sautéed in olive oil and dressed with a sauce of red
choricero peppers, onions, garlic, and,-sometimes- tomato. It’s a delicious
meal, one of the best -in my opinion- Basque meals, even better than
“talo” (which I also love).

3. MERLUZA EN SALSA VERDE
CON ALMEJAS
Hake in green sauce (also called kosquera hake or Basque hake) is a Basque cuisine dish whose
main ingredient is hake (Merluccius merluccius) accompanied by a green sauce and clams. Is
traditionally served in a clay pot with a bolied egg chopped . A boiled egg is a very common recipe
menus day of Spanish restaurants.

4. Tuna Pot
Today it is a popular dish, in part due to the increasing popularity of Basque
cuisine, and in part because it is one of the best-known ways to prepare tuna,
a fish that is now widely prized for its nutritional value. There are also
varieties of marmitako that substitute salmon for tuna.
