This document summarizes three traditional Basque meals: Bakalao a la Bizkaina, which is fish gently sautéed in olive oil and dressed with a sauce of red peppers, onions, garlic, and sometimes tomato; Hake in green sauce, which is hake accompanied by a green sauce and clams served in a clay pot with a boiled egg; and Tuna pot, a popular dish of tuna cooked in a pot that can also be made with salmon instead of tuna.
