Course Description: This course tackles the 21st century skills who is adequately
prepared for work, entrepreneurship, middle level skills development and higher
education.
B. ABOUT THE INSTRUCTOR
Ms. Lialanie S. Sibulo is a faculty member of the College of
Teacher Education under the Bachelor of Technology and
Livelihood Program at the Central Bicol State University of
Agriculture - Sipocot Campus. She graduated at Central
Bicol State University of Agriculture-Sipocot Campus and
passed the licensure examination last 2018 and she is
currently undertaking her master’s degree at Naga College
Foundation, Naga City with the degree of Master of Arts in
Education major in Home Economics.
This module is designed to create an interactive communication that suits to your learning
needs. The concepts are presented in a way that illustrative example will be the guide to answer
the exercises. Enjoy and learned new things. Remember you will provide separate sheets for your

Introduction: This Module dwells with the baking tools and equipment in baking their uses,
functions and classification. A well-equipped cooking environment is the cook's best friend either
it be the home or restaurant. When you have the right kitchen tools, you feel at ease and stay focus
on preparing the meal. It is an important tool that will help you in making the delicious and fresh
bakery products. They come in various sizes and materials.
At the end of this lesson, you should be able to:
1. Prepare baking tools and equipment for specific baking purposes.
2. Classify baking tools and equipment.
3. Identify baking tools and equipment based on their uses.
Lesson 1.1: The History of Baking- Importance of Baking to Mankind
What is Baking?
Baking is a form of cooking where you cook flour-based food under prolonged heating.
An oven is generally used to bake food but there are a few other methods to bake food without an
oven. Homestead Honey mentions a few ways of baking without oven. I experimented the baking
without oven by baking cookies without oven.
Bread is the first thing that comes to your mind when you think of baking. However, cookies,
cakes, muffins, and many other foods are also popular in baking.
The history of Baking
STONE AGE
•Swiss Lake Dwellers, more than 8,000 years ago, learned to mix flour and water which they
cooked on heated stones.

•The Babylonians, Chileans, Assyrians and Egyptians had used the same procedure of breaking
bread.
•Royal Egyptian household discovered accidentally that the dough when set aside flowed and
expanded. Since then bread was baked in this manner in 17th century.
BAKING IN GREECE
•Slaves started public bakeries somewhere in Greece 300-200 BC and was took over by Romans.
It was said that the quality of baked product then was comparable to the quality of baked products
today.
BAKING IN AMERICA
•In 1604, baking was brought to America by the James town colonists. The industry flourished
with the country in the last half of the 19th century. Construction of ovens and mixing troughs was
much improved. A variety of baked products came out.
Baking and its Importance
Baking was traditionally done at home by women, generally for the family. Commercially,
men used to bake in bakeries and restaurants. Baked goodies, especially bread are one of the most
important parts of our day to day food. Human beings have been baking for ages. The history of
baking is deep enough to encourage you to start baking at home.
European and American cuisines have a high importance of baking. The cuisine looks
incomplete without bread, cakes, pastries etc. that forms a major part of their food. In Asian
countries, Chapati is the most common bread in the food. Chapati is one of the simplest forms of
baking without an oven.
Advantages of Baking
Baking enhances the flavor and aroma of the food. For those who have been baking at
home, they know what I mean when I talk about the aroma of baking. Baking can expand the
possibilities of making food healthier. People are moving from deep fried stuff to baked goodies.
Baking is no longer just all-purpose flour, white sugar and butter baked together. Health
conscious people have taken baking to a different level. People now bake with millets, whole wheat
flour, and multigrain flour. They avoid sugar and extract sweetness naturally.
HISTORY OF BAKING IN THE PHILIPPINES
One school of thought is that Spanish missionaries introduced baking to the country. Wheat
was often used in food, by missionaries, who introduced the diet, as well as the preparation and
process to the locals.
Similar to many aspects of Philippine life, our history as a baking country is comprised of
influences from many different cultures. From there, it became part and partial of growing up
Filipino.
The importance of baked goods in Philippine tradition is undeniable. With so many foreign
influences that made their mark in how baking developed in the Philippines, there is no definitive
answer really, to how it all began. What we do know, is the importance of this wonderfully
delicious art, and how it has since been vital in every Filipino’s life.
Baking Tools and Equipment their Uses and Classification
Liquid Measuring Glass - is made of transparent glass or
plastic with pouring lip, is used for measuring liquid ingredients.
Dry Measuring Cup- Individual Dry Measuring Cups used
to measure large quantities of dry and solid ingredients and with
measurements (1, 3/4, 2/3, ½, 1/3, ¼, 1/8) marked on each side.
Measuring Spoons- It is a set of individual measuring
spoons used to measure small amount of ingredients.
Weighing Scale- It is used to measure ingredients for
accurate measurements.
Digital Weighing Scale- It is an instrument used to measure the
weight accurately the weight of the ingredients.

Cookie Cutter- It is a device with sharp edges for cutting
cookie dough into a particular shape.
Dough Cutter- It is a tool with a sharp edge used to cut the
dough.
Grater- It is used to grate cheese, chocolate, and other fresh fruits.
Kitchen Shears- are used for various cutting
procedures.
Paring Knife - It is used to pare or cut fruits and
vegetables into different sizes.
Cake Knife- It is a sharp, thin-bladed slicing knife and works its way
into your cake.
Serrated Knife- It has scalloped, tooth like edge, are ideal for
cutting through foods with a hard exterior and softer interior, such as a
loaf of crusty bread.
Pastry Blender- It is made of wires held together by a
handle; used for cutting-in solid fat or shortening in the
preparation of pies, biscuits or doughnuts.
Pastry Wheel- It is a round blade knife used to cut dough
when making pastries.
Rotary Egg Beater- It is used in beating eggs or whipping cream.
Wire Whisk - It is used to beat or whip egg whites or cream.
Wooden Spoon - It is also called mixing spoon which comes in
various sizes suitable for different types of mixing.
Rolling Pin- It is used to flatten or roll the dough.
Rubber Scrapper- It is used to remove bits of food on sides of the bowl.
Spatula - It comes in different sizes; Small spatula are used to
remove muffins and molded cookies from pans which is 5 to 6 inches; Large
spatula for icing or frosting cakes; flexible blade is used for various
purposes.
Strainer/Sifter- It is used to strain or sift dry ingredients.

Set of Mixing Bowls- It comes in graduated sizes and has
sloping sides; used for mixing ingredients.
Mortar and Pestle- It is used to pound or ground
ingredients.
Utility Tray- It is a shallow platform made of stainless, plastic
used to hold ingredients and other materials.
Chopping Board- It is often made of wood or plastic and come in
various widths and sizes and is use for various cutting purposes in
the kitchen.
Cake Decorating Tips- It is used in decorating or designing cake
and other pastry products.
Pastry Bag- It is an open cone- or triangular shaped, hand-held bag
made from cloth, paper, or plastic that is used to pipe semi-solid foods
by pressing them and are used for icing or whipped cream.
Cake Tester- A kitchen utensil that is used to check the doneness of cakes.
Pastry Tip- It is a pointed metal or plastic tube connected to the
opening of the pastry bag and is used to form desired designs.
Pastry Brush- Is used to spread butter, oil or glaze on food. It is also used
to remove cake crumbs.
Cookie Press- It is used to mold and shape cookies.
Cake Server- A companion utensil to a cake knife, the Cake
Server is used to place pieces of cut cake and pie on plates to be served.
Turntable- It is a revolving stand with a flat working surface for
decorating cakes and other pastry products
Cookie Sheet- It is a flat rectangular metal with at least one rolled edge
used especially for the baking cookies.

Baking Tray or Baking Sheet- It is a flat, rectangular metal pan
used for baking variety of bread.
Round Tube Pan- A tube pan is a deep,
smooth-sided baking pan with a hollow tube in the middle. It's
used primarily for baking angel food and sponge cakes. The tube
pan can be made as a single piece pan or as a two-piece pan with
a removable flat round bottom to help extricate the cake after baking.
Rectangular Pan- Good for baking big rectangular cakes,
mousses and large brownies and bar recipe.
Round Pan- It come in a variety of sizes and are commonly used
for making tiered wedding cakes.
Novelty Cake Pans- It come in a variety of unique shapes like heart,
pillow, diamond, and petal. These pans are excellent for baking creative cakes
without the added time, difficulty, and waste of cake sculpting.
Muffin Pan- It is a baking pan formed of a group of connecting
cups usually used for muffins or cupcakes.
Bundt Pan- It is generally used for baking coffee cakes and sweet
cakes, known as Bundt Cakes. When the mixture of cake ingredients is
baked, the cake is shaped into the decorative form of the pan.
Tartlet Molds- it is used for baking tarts and desserts.
Pie Plate- Pie plates are used to bake single crust and double crust pies. It
is composed of varied sizes.
Loaf Pan- It is a narrow rectangular pan and is used for baking
loaf bread.
Square Pan- Is a pan that is ideal for baking brownies.
OVENS - are the workhorses of the bakeshop and are essential for producing the bakery
products. Ovens are enclosed spaces in which food is heated, usually by hot air. Below
are the kinds of ovens:
DeckOvens- are so called because the items to be baked either on sheet
pans or in the case of some bread free-standing are placed directly on
the bottom, or deck of oven. This is also called STACK OVEN because
several may be stacked on top of one another. Breads are baked directly
on the floor of the oven and not in pans. Deck oven for baking bread are
equipped with steam ejector.
Rack Oven - It is a large oven into which entire racks full of
sheet pans can be wheeled for baking.

Mechanical Oven- The food is in motion while it bakes in this type
of oven. The most common types are a revolving oven, in which his
mechanism is like that of a Ferris wheel. The mechanical action
eliminates the problem of hot spots or uneven baking because the
mechanism rotates throughout the oven. Because of its size it is especially
used in high volume operations. It can also be equipped with steam ejector.
Convection Oven - It contains fans that circulate the air and
distribute the heat rapidly throughout.

She graduated at Central Bicol State University of Agriculture-Sipocot Campus and passed the licensure examination last 2018 and she is currently undertaking her master’s degree at Naga College Foundation, Naga City with the degree of Master of Arts in Education major in Home Economics.   • 4. Introduction: This Module dwells with the baking tools and equipment in baking their uses, functions and classification. A well-equipped cooking environment is the cook's best friend either it be the home or restaurant. When you have the right kitchen tools, you feel at ease and stay focus on preparing the meal. It is an important tool that will help you in making the delicious and fresh bakery products. They come in various sizes and materials. At the end of this lesson, you should be able to: 1. Prepare baking tools and equipment for specific baking purposes. 2. Classify baking tools and equipment. 3. Identify baking tools and equipment based on their uses. Lesson 1.1: The History of Baking- Importance of Baking to Mankind What is Baking? Baking is a form of cooking where you cook flour-based food under prolonged heating. An oven is generally used to bake food but there are a few other methods to bake food without an oven. Homestead Honey mentions a few ways of baking without oven. I experimented the baking without oven by baking cookies without oven. Bread is the first thing that comes to your mind when you think of baking. However, cookies, cakes, muffins, and many other foods are also popular in baking. The history of Baking STONE AGE •Swiss Lake Dwellers, more than 8,000 years ago, learned to mix flour and water which they cooked on heated stones. QUARTER 1 BREAD AND PASTRY

Page | 5 •The Babylonians, Chileans, Assyrians and Egyptians had used the same procedure of breaking bread. •Royal Egyptian household discovered accidentally that the dough when set aside flowed and expanded. Since then bread was baked in this manner in 17th century. BAKING IN GREECE •Slaves started public bakeries somewhere in Greece 300-200 BC and was took over by Romans. It was said that the quality of baked product then was comparable to the quality of baked products today. BAKING IN AMERICA •In 1604, baking was brought to America by the James town colonists. The industry flourished with the country in the last half of the 19th century. Construction of ovens and mixing troughs was much improved. A variety of baked products came out. Baking and its Importance Baking was traditionally done at home by women, generally for the family. Commercially, men used to bake in bakeries and restaurants. Baked goodies, especially bread are one of the most important parts of our day to day food. Human beings have been baking for ages. The history of baking is deep enough to encourage you to start baking at home. European and American cuisines have a high importance of baking. The cuisine looks incomplete without bread, cakes, pastries etc. that forms a major part of their food. In Asian countries, Chapati is the most common bread in the food. Chapati is one of the simplest forms of baking without an oven. Advantages of Baking Baking enhances the flavor and aroma of the food. For those who have been baking at home, they know what I mean when I talk about the aroma of baking. Baking can expand the possibilities of making food healthier. People are moving from deep fried stuff to baked goodies. Baking is no longer just all-purpose flour, white sugar and butter baked together. Health conscious people have taken baking to a different level. People now bake with millets, whole wheat flour, and multigrain flour. They avoid sugar and extract sweetness naturally. HISTORY OF BAKING IN THE PHILIPPINES One school of thought is that Spanish missionaries introduced baking to the country. Wheat was often used in food, by missionaries, who introduced the diet, as well as the preparation and process to the locals.
  • 6. Similar to many aspects of Philippine life, our history as a baking country is comprised of influences from many different cultures. From there, it became part and partial of growing up Filipino. The importance of baked goods in Philippine tradition is undeniable. With so many foreign influences that made their mark in how baking developed in the Philippines, there is no definitive answer really, to how it all began. What we do know, is the importance of this wonderfully delicious art, and how it has since been vital in every Filipino’s life. Baking Tools and Equipment their Uses and Classification Liquid Measuring Glass - is made of transparent glass or plastic with pouring lip, is used for measuring liquid ingredients. Dry Measuring Cup- Individual Dry Measuring Cups used to measure large quantities of dry and solid ingredients and with measurements (1, 3/4, 2/3, ½, 1/3, ¼, 1/8) marked on each side. Measuring Spoons- It is a set of individual measuring spoons used to measure small amount of ingredients. Weighing Scale- It is used to measure ingredients for accurate measurements. Digital Weighing Scale- It is an instrument used to measure the weight accurately the weight of the ingredients.
  • 7. Page | 7 Cookie Cutter- It is a device with sharp edges for cutting cookie dough into a particular shape. Dough Cutter- It is a tool with a sharp edge used to cut the dough. Grater- It is used to grate cheese, chocolate, and other fresh fruits. Kitchen Shears- are used for various cutting procedures. Paring Knife - It is used to pare or cut fruits and vegetables into different sizes. Cake Knife- It is a sharp, thin-bladed slicing knife and works its way into your cake. Serrated Knife- It has scalloped, tooth like edge, are ideal for cutting through foods with a hard exterior and softer interior, such as a loaf of crusty bread. Pastry Blender- It is made of wires held together by a handle; used for cutting-in solid fat or shortening in the preparation of pies, biscuits or doughnuts.
  • 8. Pastry Wheel- It is a round blade knife used to cut dough when making pastries. Rotary Egg Beater- It is used in beating eggs or whipping cream. Wire Whisk - It is used to beat or whip egg whites or cream. Wooden Spoon - It is also called mixing spoon which comes in various sizes suitable for different types of mixing. Rolling Pin- It is used to flatten or roll the dough. Rubber Scrapper- It is used to remove bits of food on sides of the bowl. Spatula - It comes in different sizes; Small spatula are used to remove muffins and molded cookies from pans which is 5 to 6 inches; Large spatula for icing or frosting cakes; flexible blade is used for various purposes. Strainer/Sifter- It is used to strain or sift dry ingredients.
  • 9. Page | 9 Set of Mixing Bowls- It comes in graduated sizes and has sloping sides; used for mixing ingredients. Mortar and Pestle- It is used to pound or ground ingredients. Utility Tray- It is a shallow platform made of stainless, plastic used to hold ingredients and other materials. Chopping Board- It is often made of wood or plastic and come in various widths and sizes and is use for various cutting purposes in the kitchen. Cake Decorating Tips- It is used in decorating or designing cake and other pastry products. Pastry Bag- It is an open cone- or triangular shaped, hand-held bag made from cloth, paper, or plastic that is used to pipe semi-solid foods by pressing them and are used for icing or whipped cream.
  • 10. Cake Tester- A kitchen utensil that is used to check the doneness of cakes. Pastry Tip- It is a pointed metal or plastic tube connected to the opening of the pastry bag and is used to form desired designs. Pastry Brush- Is used to spread butter, oil or glaze on food. It is also used to remove cake crumbs. Cookie Press- It is used to mold and shape cookies. Cake Server- A companion utensil to a cake knife, the Cake Server is used to place pieces of cut cake and pie on plates to be served. Turntable- It is a revolving stand with a flat working surface for decorating cakes and other pastry products Cookie Sheet- It is a flat rectangular metal with at least one rolled edge used especially for the baking cookies.
  • 11. Page | 11 Baking Tray or Baking Sheet- It is a flat, rectangular metal pan used for baking variety of bread. Round Tube Pan- A tube pan is a deep, smooth-sided baking pan with a hollow tube in the middle. It's used primarily for baking angel food and sponge cakes. The tube pan can be made as a single piece pan or as a two-piece pan with a removable flat round bottom to help extricate the cake after baking. Rectangular Pan- Good for baking big rectangular cakes, mousses and large brownies and bar recipe. Round Pan- It come in a variety of sizes and are commonly used for making tiered wedding cakes. Novelty Cake Pans- It come in a variety of unique shapes like heart, pillow, diamond, and petal. These pans are excellent for baking creative cakes without the added time, difficulty, and waste of cake sculpting. Muffin Pan- It is a baking pan formed of a group of connecting cups usually used for muffins or cupcakes. Bundt Pan- It is generally used for baking coffee cakes and sweet cakes, known as Bundt Cakes. When the mixture of cake ingredients is baked, the cake is shaped into the decorative form of the pan.
  • 12. Tartlet Molds- it is used for baking tarts and desserts. Pie Plate- Pie plates are used to bake single crust and double crust pies. It is composed of varied sizes. Loaf Pan- It is a narrow rectangular pan and is used for baking loaf bread. Square Pan- Is a pan that is ideal for baking brownies. OVENS - are the workhorses of the bakeshop and are essential for producing the bakery products. Ovens are enclosed spaces in which food is heated, usually by hot air. Below are the kinds of ovens: DeckOvens- are so called because the items to be baked either on sheet pans or in the case of some bread free-standing are placed directly on the bottom, or deck of oven. This is also called STACK OVEN because several may be stacked on top of one another. Breads are baked directly on the floor of the oven and not in pans. Deck oven for baking bread are equipped with steam ejector. Rack Oven - It is a large oven into which entire racks full of sheet pans can be wheeled for baking.
  • 13. Page | 13 Mechanical Oven- The food is in motion while it bakes in this type of oven. The most common types are a revolving oven, in which his mechanism is like that of a Ferris wheel. The mechanical action eliminates the problem of hot spots or uneven baking because the mechanism rotates throughout the oven. Because of its size it is especially used in high volume operations. It can also be equipped with steam ejector. Convection Oven - It contains fans that circulate the air and distribute the heat rapidly throughout.
