OBJECTIVES:
Define salad;
Identify tools, equipment, and utensils needed in
preparing salad and dressing;

Activity No. 1 - Pictionary!
Instruction:
Each group will be given 2 minutes to guess the words.
1 group member will draw the word so that others can
guess what it is. After finding out one word, he/she will pass
the pen to another group mate until they guess all the
words in 2 minutes.
The group who will guess more word in less time will be the
winner.
The winner of this activity will be given 1 Group Card for the
next major performance task. The use of this group card will
be explained soon.
Tools, Equipments, Utensils
Needed in Preparing Salads
Knives
- good quality knives
with sharp, sturdy
stainless steel blades
and with handles that
securely attached and
that feel perfectly
comfortable in your
hand.
Cutting Board
- is a durable board on
which to place
ingredients
for cutting.
Peeler
- is a kitchen tool
consisting of a slotted
metal blade attached to a
handle, that is used to
remove the outer skin or
peel of certain
vegetables, frequently
potatoes and carrots, and
fruits such as apples,
pears.
Citrus zester
- is approximately four inches
long, with a handle and a
curved metal end, the top of
which is perforated with a
row of round holes with
sharpened rims.
- To operate, the zester is
pressed with moderate force
against the fruit and drawn
across its peel. The rims cut
the zest from the pith
underneath.
Grater/Shredder
- A grater (also known
as a shredder) is a
kitchen utensil used to
grate foods into fine
pieces. It was invented
by François Boullier in
1540s.
Grill pan
- Used for salad
toppings to be
broiled or grilled.
Salad Spinner
- used to hold just
washed salad leave in a
slotted basket that is
made to spin by hand
and thus fling all the
water off the leaves
into the outer
container.
Mixing bowls
- used to mix dressings,
marinate ingredients, hold
separate elements of a salad
before assembling and used
to toss and mix all the
ingredients together. Used
bowls made of sturdy, heavy
glass wares or ceramic, so as
not to react with acidic
ingredients.
Salad servers
- “Salad sets” with big salad
bowls, serving bowls and
servers. Select materials
having enough surfaces to
really grasp the ingredients of
salad, no matter how slippery
and thus making tossing
easier.

An appetizer salad, served as an
appetizer to the main meal, is smaller in
portion and consists of light, fresh, crisp
ingredients to stimulate the appetite.

Classification of Salads
According to Ingredients Used
SALAD
- is a combination
of vegetables,
fruits and other
ingredients
served with a
dressing.
1. Green salad •must be fresh,
clean, crisp
and cold and
well drained.
Moisture and
air are
necessary to
keep greens
crisp.
2. Vegetable, Grain Legumes and Pasta Salads
are salads whose main ingredients are vegetables other
than lettuce or other leafy greens.
Starchy items such as grains, pastas and dried legumes can
also form the body of a salad.
Raw or cooked vegetables are usually added to the starch
items to enhance the color, flavor and nutritional balance of
the salad.
Protein items such as poultry, meat, seafood and cheese
maybe added to vegetables and starch salads.

3. BOUND SALADS
 are mixtures of foods that are
held together or bound with a
dressing usually a thick dressing
like mayonnaise.
 The term bound is most often
used for traditional mixtures
of cooked protein, starch and
vegetables items with
mayonnaise like chicken salad,
tuna salad, egg salad and
potato salad.
4. Fruit Salad
•Contain fruits
as their main
ingredients,
like appetizer
salads or
dessert
salads.
5. Composed Salads • made by arranging two
or more elements
attractively on a plate.
They are called
composed because the
components are
arranged on the plate
rather than being
mixed together.
• They are elaborate
and can be
substantial in size,
usually served as
main courses or fruit
courses rather than
accompaniments or
side dishes.
6. Gelatin Salads
• most gelatin products
are made with
sweetened prepared
mixes with artificial color
and flavor.
• But some professional
cook used to prepare
salads using unflavored
gelatin relying on fruit
juices and other
ingredients for flavor.

Proper Storage of Kitchen Tools and Equipment
Cleaned and sanitized equipment and
utensils must be:
stored in clean storage areas; and
handled properly to minimize
contamination of food contact surface.
10 Steps in Organizing Kitchen Cabinets
1. Pretend it has a glass door and that
everyone is going to see what’s inside.
2. Remove all the equipment and scrub
shelves with soapy water.
3. Think about what you reach most often and
make sure it gets a position that’s easy to
reach.
4. Take a cabinet full of glasses and line them
up by color. Make sure all of the front are facing
out and straight. (Jeff Lewis-Style)
5. Take a step back after one shelf is done and
make someone else look at what you’ve done.
6. They should be stored in a clean dry place
adequately protected against vermin and other
sources of contamination
7. Cups, bowls, and glasses must be inverted
for storage.
8. When not stored in closed cupboards or
lockers, utensils and containers must be
covered or inverted whenever possible. Utensils
must be stored on the bottom shelves of open
cabinets below the working top level.
9. Racks, trays and shelves must be made of
materials that are imperious, corrosive-
resistant, non-toxic, smooth, durable and
resistant to chipping.
10. Drawers must be made of the same
materials and kept clean. Full-lined drawers
are not acceptable, but the use of clean and
removable towels for lining drawers is
acceptable.
CLEANING AND SANITIZING
KITCHEN PREMISES
Each group will be assigned to clean and sanitize
the school canteen premises. One group will be
assigned every Friday afternoon after the last
period. The group will be graded according to
the given rubric.

  • 3. Activity No. 1 - Pictionary! Instruction: Each group will be given 2 minutes to guess the words. 1 group member will draw the word so that others can guess what it is. After finding out one word, he/she will pass the pen to another group mate until they guess all the words in 2 minutes. The group who will guess more word in less time will be the winner. The winner of this activity will be given 1 Group Card for the next major performance task. The use of this group card will be explained soon.

  • 6. Knives - good quality knives with sharp, sturdy stainless steel blades and with handles that securely attached and that feel perfectly comfortable in your hand.
  • 7. Cutting Board - is a durable board on which to place ingredients for cutting.
  • 8. Peeler - is a kitchen tool consisting of a slotted metal blade attached to a handle, that is used to remove the outer skin or peel of certain vegetables, frequently potatoes and carrots, and fruits such as apples, pears.
  • 9. Citrus zester - is approximately four inches long, with a handle and a curved metal end, the top of which is perforated with a row of round holes with sharpened rims. - To operate, the zester is pressed with moderate force against the fruit and drawn across its peel. The rims cut the zest from the pith underneath.
  • 10. Grater/Shredder - A grater (also known as a shredder) is a kitchen utensil used to grate foods into fine pieces. It was invented by François Boullier in 1540s.
  • 11. Grill pan - Used for salad toppings to be broiled or grilled.
  • 12. Salad Spinner - used to hold just washed salad leave in a slotted basket that is made to spin by hand and thus fling all the water off the leaves into the outer container.
  • 13. Mixing bowls - used to mix dressings, marinate ingredients, hold separate elements of a salad before assembling and used to toss and mix all the ingredients together. Used bowls made of sturdy, heavy glass wares or ceramic, so as not to react with acidic ingredients.
  • 14. Salad servers - “Salad sets” with big salad bowls, serving bowls and servers. Select materials having enough surfaces to really grasp the ingredients of salad, no matter how slippery and thus making tossing easier.
