PDCA 模擬演練
某公司接到客訴,說明該公司洗選蛋產品部份過
小,不合洗選蛋分類標準。
消費者至某超市購買一盒洗選蛋,因部蛋尺寸差
異明顯,於是個別秤重。
包裝貼有洗選蛋標章, L/10 顆裝,標示其重量
是 600 g ± 30
本文件內容與使用之數據純屬模擬之客訴事件,
作為 HACCP 課程演練,並非真實案例。
洗選蛋規格與 CNS 2100 相同
特大蛋 66-72 公克( LL 橘色)
大 蛋 60-66 公克( L 紅色)
中 蛋 54-60 公克( M 綠色)
小 蛋 48-54 公克( S 黃色)
特小蛋 42-48 公克( SS 藍色)

分析可能之問題
分類機保養維修前之進行分類能力檢查。從分類結果設定選出 60 – 66
g 的級別,對每個蛋在品管實驗室中,使用校正過的磅秤進行個別秤
重,並以直方圖呈現。
假設根據機械操作手冊,此級別 (L) 之蛋品只能有
0.1% 的失誤,也就是一千顆蛋會有一個分類失誤。
因此推測是機械之問題,需要進行維修與保養。

經魚骨圖分析,判定可能的原因是自動分類機無法正常運
作,而且應加強品管之工作。

工廠有 20 台分級機,經測試,有兩台
選別能力有問題,預計請原廠工程師進
行維修或保養。
2. D— 執行
進行維修與校正。
3. C— 檢查
比較分級機,維修前後之選別能力。
4. A— 行動
對其餘每台分類機進行測試,並進行維
修與校正。
