PDCA 模擬演練 某公司接到客訴,說明該公司洗選蛋產品部份過 小,不合洗選蛋分類標準。 消費者至某超市購買一盒洗選蛋,因部蛋尺寸差 異明顯,於是個別秤重。 包裝貼有洗選蛋標章, L/10
顆裝,標示其重量 是 600 g ± 30 本文件內容與使用之數據純屬模擬之客訴事件, 作為 HACCP 課程演練,並非真實案例。

選別上的問題 人員 設備 管理材料 蛋品分級機是否 保養與校正 ? 包裝前,人員是否混用不同 級別的蛋品 ? 是否落實品管
? 高層是否指示混用 不同級別之產品? 不同產期、產地、品種的母 雞,產出的雞蛋厚薄、大小不 一 ( 混蛋 ) 密度不同。 人員是否正確機器之參數 ? 是否使用內部 標準品校正? 分析可能之問題

分類機保養維修前之進行分類能力檢查。從分類結果設定選出 60 –
66 g 的級別,對每個蛋在品管實驗室中,使用校正過的磅秤進行個別秤 重,並以直方圖呈現。 假設根據機械操作手冊,此級別 (L) 之蛋品只能有 0.1% 的失誤,也就是一千顆蛋會有一個分類失誤。 因此推測是機械之問題,需要進行維修與保養。 找出問題 洗選蛋規格 特大蛋 66-72 公克( LL 橘色) 大 蛋 60-66 公克( L 紅色) 中 蛋 54-60 公克( M 綠色) 小 蛋 48-54 公克( S 黃色) 特小蛋 42-48 公克( SS 藍色) SS S M L LL 42 48 54 60 66 重量 (g) 數量
