10. Jean-Luc Colombo
He is a man of deep convictions, who can always be relied on to ably defend the rich cultural
heritage of the French gastronomy. For Jean-Luc, wine and food are indivisible. In his experience,
a good meal without a glass of wine does not exist because, as the great gourmand François
Rabelais (1494-1553) famously wrote, "Appetite comes with eating. Thirst disappears as one
drinks."

Vines and Cellar
Grape variety: Syrah
Terroir: Granite terraces from the North of the appellation on the left
bank of the Rhône.
The grapes are harvested manually in small cases and vinified
traditionally.
The wine is matured for 9 months, 33% in oak barrels of 1 and 2 years.
Tasting
The wine possesses typical aromas of Syrah from the northern Rhône :
small red fruits, blackcurrents, supported by spicy notes. A little
jammy, typical of the vintage 2003
Serving temperature : 15-16°
The wine is well structured and pleasant and can be enjoyed straight
away for its' fruit or it may be aged for 4 or 5 years.
Pairing
La Tuilière goes well with a good steak, medium rare.

12. Jacob’s Creek

13. Jacob's Creek Shiraz Reserve 2006
Country: AUSTRALIA
Region: SOUTH AUSTRALIA / Barossa Valey
Grape Varietal: SYRAH
Color: Deep crimson with dark red hues
Bouquet: Lifted aromas of mulberry and blackberry with
underlying hints of cloves and anise, balanced by spicy oak notes.
Palate: The 2006 Jacobs Creek Reserve Shiraz is a full bodied wine
displaying rich fruit flavours of dark berries and plums and velvety
tannins. Lovely acid balance and integration of flavours result in a
supple and engaging wine with a lingering finish of spice, chocolate
and mocha. A true expression of Australian Shiraz, to be enjoyed
now or which with careful cellaring will develop gracefully over the
next ten years.
14. Valdivieso
La historia de Viña Valdivieso se remonta a 1879, año en
que Don Alberto Valdivieso fundó Champagne Valdivieso,
la primera casa productora de champaña de Chile y
Sudamérica. Más de cien años después, a fines de la
década de 1980, se dio un nuevo impulso a la producción
comercial de vinos finos como Viña Valdivieso en nuestra bodega de Lontué, Valle de Curicó.
Desde entonces, los vinos Valdivieso han tenido una muy exitosa carrera, triunfando en los más
importantes mercados y obteniendo los más grandes premios alrededor del mundo. Sin embargo,
estos logros no son un objetivo en si mismos, sino el resultado de la búsqueda de vinos de calidad
superior con un sello distintivo y atractivo.
Producir vinos de calidad requiere de un cuidadoso y equilibrado manejo en cada una de las
etapas de la vinificación. Nuestros mayores esfuerzos se concentran en los viñedos para obtener
la mejor uva, que es el factor determinante de la calidad y del sello distintivo de cada vino.
En la bodega, durante el proceso de vinificación procuramos rescatar las cualidades de la uva con
la menor intervención posible para evitar que pierdan potencia o complejidad. Para los vinos
envejecidos en barrica, nuestra regla básica es que el aporte de la madera de roble debe
acompañar y potenciar las características de la fruta, y en ningún caso debe opacarlas o
esconderlas.
15. Valdivieso Reserva Syrah
2007

Guarda 12 meses, en barrica de roble 100% francés
Análisis del vino Alc 14.0
Notas de Cata
Estilo dulce con especias y con un delicado carácter floral en el fondo. Gran cuerpo con
suaves notas tánicas y muy buena estructura.
Viticultura
Clones de Syrah 300 y 174 sobre un patrón franco. Las vides son de nuestros viñedos
Primavera localizadas en Sagrada Familia (Valle de Curico). El suelo es pedregoso, laderas
con poco drenaje terreno favorable para el Syrah. Las vides se manejaron
cuidadosamente, para obtener pequeñas bayas concentradas que mejor mostrarían el
potencial del Syrah.
Enología
La uva es despalillada sin aplastar y sometida a proceso de frío por 48 horas antes de
agregar levadura. La fermentación se realiza en pequeños tanques de acero inoxidable
durante 7 días. Durante la fermentación la capa de orujo se revolvió tres veces al día.
Después de la fermentación alcohólica, se realiza la maceración post-fermentativa de la
piel de la uva durante 14 días, antes del prensado. El vino pasa directamente a barricas y
sufre una fermentación maloláctica natural en barrica.
Comentarios del Enólogo
Syrah es una variedad con un potencial fantástico en Chile. En este ejemplo nosotros
quisimos mostrar el potencial de nuestros campos para esta variedad, buscando la mayor
concentración de fruta posible, y manteniendo el delicado carácter floral tan típico del
Syrah.
