Italian soft, smear ripened cheese
Taleggio has been granted a PDO designation and is a soft,
smear-ripened Italian cheese produced in the region of Val Taleggio
and ripened in caves.
The flavor of Taleggio PDO is sweet, buttery and very aromatic
in the matured cheese. The rind is of a natural rose color without
surface flora treatment except washing with salt and water. Ripening
from rind to core results in a softer cheese texture under the rind
than in the core of a cheese.
Taleggio PDO has a square shaped form of 20 cm length and 7 โ 8 cm
height, at a weight of 1.7 โ 2.2 kg per piece.
