1. Preheat the oven to 200⁰C.
2. Clean all mushrooms and remove
their stems.
3. Heat the oil in a medium hot pan, add
the shallots and sauce for 2 minutes.

4. Add the garlic to the pan and cook for
a further minute.
5. Place the breadcrumbs in a medium
sized bowl and add in the
shallot/garlic
mixture, parmesan, oregano, parsley
and beaten egg – lightly combine.

cracked pepper.

7. Grease a baking tray and lay out the
mushrooms top down. Divide the
stuffing evenly between the mushrooms
and press down firmly.
8. Drizzle mushrooms with olive oil and
bake for 15 minutes or until the tops are
golden and the mushrooms are tender.
9. Serve immediately.
