4. Makes 18 Cookies
These oatmeal cookies are packed
full of wholegrain and fibre to fill
you up and keep those hunger
pangs at bay.
They're great for snacks and are
also suitable for people with
diabetes.
5. Ingredients
* 1 cup old-fashioned oats * 1/3 cup wheat bran
* 1 tbs orange juice * 1/2 tsp baking soda
* 1 cup whole-wheat pastry flour * 1/2 tsp cream of tartar
* 1/2 cup softened low-fat butter * 1/4 tsp cinnamon
* 1/4 cup granulated sugar * 1 orange, zested and juiced
* 1/4 cup dark brown sugar * 1 egg white

6. Preheat the oven to 350F (gas mark 4).
Put the butter in a medium-sized mixing bowl and
whisk with an electric mixer. Slowly add both of the
sugars and continue to mix for 2-3 minutes.
Add the egg white.
7. Sieve the dry ingredients together in
another mixing bowl. Then, add to the wet
mix, along with the orange juice and zest.
Now, spoon the dough, 1 tablespoon at a
time, onto two baking trays lined with
parchment paper.
8. Bake for 10 minutes or until the bottom of the
cookies are golden brown.
Cool on a wire rack and serve.
