In 4th century BC, Hippocrates, the father of modern medicine , stated…. In his day, one of the biggest health concerns was how to feed the masses
Centuries later, in the the Cecil Textbook of medicine, it is estimated that 300-800 k deaths per year would be prevented if we would follow clinically recommended guidelines for nutrition. the enhancement in quality of life would be immense
Early in the 20th century, americas concerns were similar to hippocrates then In the mid 1950s what we now consider conventional farming came into vogue. Using Chemical fertilizers, pesticides, hormones, steroids, and antibiotics became common practice.. In the beginning these chemicals appeared to be the solutions to the farming problems: the crops had increased yield in shorter time and the losses from insects and disease were reduced. We had enough food for our families and the farmers could actually have easier, more profitable lives . Pesticides soon became the largest class of toxic chemicals. And as frequently happens with chemicals, side effects began to arise. Health hazards linked to the chemicals, began to emerge. Farmers and those living near the farms began to experience increased rate of cancers and neurological related illness among others. It is important to note in a study from NIH that there is actually a 70% increase in parkinsons with people with higher exposures to these toxins. A recent review of neuro effects by the NIH stated that “these chemicals are designed to be toxic to pest and now are also found to be toxic to non target species.. That includes humans”
Environment issues are now occurring with decreased nutrition in soil and overgrowth of some plants in our waterways such as algae blooms that leads to the production of deadzones where other wildlife is deprived of oxygen and dies . Even if no health or environmental effects occurred, new alternatives are needed because more chemicals are now necessary to produce the same results .
In response to these concerns, a return to organic farming has gained popularity…. so what is organic .
It is farming with no toxic chemicals.
It is Using natural predators and nontoxic sprays
It is using crop rotation To reduce the nutritional depletion of the soil –because even soil needs a break . and to give back nutrition such as nitrogen by growing and then tilling under alfalfa
These efforts provide soil with 30 percent more carbon . This produces food with more nutrition for our bodies and stronger sustainablity for our earth
clinical data analyzed from 236 comparative studies show that organically grown produce contains 25% more nutrition such as antioxidant and vitamins. This is important because of the steady decline in available nutrients in our food over the past century.
Growing food organically is typical more labor intensive and costs more . That cost is passed to us the consumer. So how do we balance the health benefits of clean nutritious foods with the cost to our wallets in this trying economic time?
Of course we can grow our own vegetables, but some of us are not gifted that way .even if lee mcbride is trying to help us! Luckily we have 4800 farmers markets in the US . Another way to get farm fresh food is to participate in a CSA there are several in our area. Consumers pay to be part of a buying group and purchase in season local foods.
. Do not assume that just because a farmer is local that he follows cleaner health concepts, likewise a farmer may utilize organic practices without being federally certified. The advantage of buying local is that you can get to know your farmer and you can ask questions and make informed choices
Another choice that we have that can affect the bottom line is choosing to buy some products organic and others not . The ewg uses the results found in an analysis of 51k tests for pesticides conducted by the usda. The ewgdevelopes a dirty dozen and clean 15 list that reflect the overall exposure and absorption of pesticides. Choosing fruit and vegetable form the clean 15 vs the dirty dozen can lower the amount of pesticides you consume by nearly 90 % . choosing 5 from the dirty dozen you consume 14 dif pesticides at higher concentrations .
Choosing from the clean 15 one consumes fewer than 2 pesticides per day
Fiber reduces cancer, heart disease, and diabetic risks as well as satiating hunger and keeping obesity at bay . It is also important to know how they are grown. grains affect us both directly and indirectly by our eating them and their being fed to animals that we eat
Protein is an important part of our nutritional needs. Some choose to get protein form grains such as quinoa, lentils, beans or tofu , but most american use beef, pork, lamb, chicken and seafood to satisfy their protein needs
This becomes more impt the higher up the food chain we eat
Omega 3 is very beneficial to our hearts and brains Some eggs in stores are sold as omega 3 fortifed.. Pasture raised chickens that feast on weeds,insects, nuts or seeds have nearly 10 x the omega 3 of non fortified eggs. Due to close quarters, antibiotics play a role in our food.The FDA reports that the bulk of antibiotics used in the US are for animal farms. Some bacteria are becoming antibiotic resistant due to over use particularly with subtherapuetic doses frequently used in feed animals. Remember what your dr and pharmacists always say when you take an antibiotic_ always use the entire prescription to reduce the chances of the bacteria surviving and becoming stronger and more resistant . Scientific american reported on a study that showed that in 1 generation of poultry being raised in an organic fashion , the number of antibiotic resistant bacteria decreased from 84% to 17%

We typically think of seafood as the source of omega 3 but beef raised on pasture and grass fed is also a great source of omega 3 containing 2-4 x the amount of that found in feedlot beef. Grassfed beef is also leaner and contains 100 fewer calories per 6 oz serving . CLA is a benefit of beef that is cardiac and cancer protective, and we access this excellent nutrient by eating well marbled grass feed beef or higher fat dairy . If we frequently eat to over ful, we can stretch our stomachs to the size of a 2 liter soda bottle .
