Enzymes break down complex organic molecules into smaller compounds and
nutrients. Protease, amylase, and lipase are three important enzymes.
 Protease breaks down huge protein molecules into polypeptides and
peptides, and then into amino acids. Amino acids are the building blocks of
the body, and are critical to cell rejuvenation and are necessary for human
growth.
 Amylase works on carbohydrates to reduce starches and complex sugars
to simple sugars or glucose, which fuels all of the body’s processes.
Increased amounts of amylase may indicate a problem with the pancreas or
gall bladder.
 Lipase hydrolyzes complex fat molecules into simpler fatty-free acids. It
helps in the absorption and digestion of nutrients in the intestines.
As some foods are digested, they ferment and produce harmful gases that lead to
indigestion, bloating, gas, etc. Digestive disorders are caused by various kinds of
undigested food masses. As undigested food ferments and decomposes, it
becomes a breeding ground for bacteria.
Food combinations that lead to fermentation and putrefaction are:

2.  Proteins and acid food combinations – Acidic foods slow down the
secretion of the digestive acids required for protein digestion. Undigested
protein putrefies in bacterial decomposition, and produces some potent
poisons.
 Desserts and meals combinations – Desserts after a meal become
heavy in the stomach and lead to minimal, if any, digestion. This results in
fermentation and bacteria that turn these foods into alcohols, vinegars, and
acetic acids.
 Acids and starch combinations – Acids neutralize the alkaline medium
required for starch digestion. The result is fermentation and indigestion.
 Tomatoes with potatoes - The acid of the tomato destroys the alkaline
medium necessary for the action of ptyalin. Ptyalin simply cannot function in
a highly acid environment, and the potatoes must wait until they reach the
small intestine for further digestion. Meanwhile, fermentation takes place in
the stomach and the bacteria will turn the potatoes into alcohol and acetic
acid.
The products of fermentation and putrefaction that result from bacterial
decomposition cause the following:
- Poisoning of the body when absorbed by the small intestine.
- Irritation of all tissues with which they come into contact.
- Gastric irritation can progress to inflammation, then to ulceration, and
finally, to cancer.
Short-term effects of incorrect food combinations include:
 Nausea and vomiting
