  3. 3. INDIRECT FIRED OVENS In convection ovens following are the two types: a) Direct convection oven The hot gases from the burner are combined with the recirculated air from the baking chamber and blown through the ducts in the baking chamber and directly onto the products.

  5. 5. Indirect Convection Ovens • The burner fires into a burner tube connected to a multipass heat exchanger. The products of combustion are circulated within the heat exchanger and do not enter the baking chamber. Air is drawn from the baking chamber through the circulating fan and then passed through the heat exchanger, where it picks up heat, before being blown through the ducts in the baking chamber and onto the product.

  9. 9. Air gets hot by means of convection and by means of openings is directed towards oven band (top and bottom)
  10. 10. Fresh air damper and zone exhaust duct (zone exhaust damper is inside the chamber) both dampers are interconnected and operated by single lever.
  11. 11. As can be seen 02 lever is for directing hot air to the band top and bottom and 01 lever is for fresh air and zone exhaust air damper.
  12. 12. Carbon deposition in burning zone is due to incomplete / improper combustion of fuel.
  13. 13. Oven band joint is of riveted type
  14. 14. Improper positioning of dampers could damage chamber walls, welding and cause rusting.
