10. From Chufa to Horchata
In this agro-food route we will move to the cradle of the chufa of
Valencia, the municipality of Alboraya. We will visit a typical
warehouse or cellar (in Valencian “cambra”) that is used as a
dryer, where they will explain the processes that follow the
cultivation of the chufa: collection, washing, drying and
classification. We will see how this tuber is processed to become
horchata, desserts, ice cream, etc.
Then, we will move to a field of chufas accompanied by an expert
farmer who will tell us what are the varieties of chufa that are grown
in Valencia and their peculiarities. We will be able to walk to see
closely the great extension of fields that are dedicated to the
cultivation of the Valencian chufa.
To end the route we will enjoy a typical Valencian meal together.
