dark working
board.
The dome is slanted towards the left while the log storage is on the

Facts About Wood Fired Pizza Ovens
Where Did Wood Fired Ovens Originate From?
Awood fired oven is one of the oldest cooking devices and it's being used at least since the
Romans time. Well preserved 2000 year old wood fired ovens were found in Pompeii ruins
(Italy) with a structure very much alike that of a modern restaurant or pizzeria oven and
have been in operation ever since through the medieval times to today.
Today much modern household cooking methods include gas, electricity and even
microwave for practical reasons, but for pizza making (or bread or roasting) nothing beats a
wood fired oven. The reason for this lays in its thermal properties. A traditional brick oven
for pizzas is made of refractory fire bricks held together by refractory cement or clay which
holds the heat and releases it for several hours afterwards.
The cooking chamber is dome shaped so as to radiate the heat from all directions to the
food being cooked. The earth of the oven also radiates heat so pizzas and bread become
cooked fast and properly, releasing all the natural flavors. A wood fired oven is made of a
cooking chamber, a door and a chimney just above the door. The door itself must be around
63% of the height of the dome for optimal performance. If it is lower than that the oven will
be chocked and won't heat enough, if it is too high the heat will escape from it.
The most basic wood fired pizza oven is a black one (also called Roman oven), where you
burn the wood in the same chamber where you cook the food, either at the same time or after
the wood has been removed,using only refractory heat. It is called black because the wood
smoke stains the inside of the dome black with time.
Awhite wood fired pizza oven has the burning chamber separate from the cooking
chamber and the heat is transmitted by radiation, eliminating the wood smoke from the fire
into the oven. A simpler alternative to the wood fired oven is the stone. A pizza stone is a
round or square stone of porous material that mimics the heat radiation of a wood oven from
below, cooking a pizza in a crisp and satisfactory way. The pizza turns out crisp and
flavorsome because the porous surface of the stone absorbs humidity.
Wood fired ovens can be used for either pizzas, bread or meat. However, there are
different temperature ranges ideal for each one. Pizzas require the highest temperatures, so
they may be cooked soon after the oven has been fired, say one hour or one and half later and
the temperatures reaches 300C to 425C. A thin pizza will cook in 2 minutes flat and will be
delicious. Later on the temperature drops to 230C and can be used for roasting meat. Bread
comes in last.
If you plan to cook only pizzas you need a comparably thinner dome (around 4 inches) than
a bread oven because it will heat up quicker and release greater heat for a shorter period. If
you plan to set up a bakery and not a pizzeria, then you need a thicker dome (around 6
inches) to have the heat released at lower temperatures for longer. In any case, a regular
wood fired pizza oven will allow you to cook both without any problem once you master the
temperature phases and timing.
