This bottle of passata holds the answers to a sustainable way of living, AND the secret to happiness!When you find your passata you’ll find…1.There’s lots in it for you 2. There’s lots in it for us, and 3. It’s better for the sustainability of our cities and our environment
So first up – the PRODUCT. These are both bottles of tomato sauce. But they’re very different.. One of them is mass-produced and could belong to anyone – the other belongs to us – it was made by Sydney-siders and it carries a story about sustainability. Passata – for those who don’t know is tomato puree., and it comes from Italy.
It comes from Italy. Here, people get together at the end of summer– when there’s a glut of sweet, ripe, tomatoes – and they bottle & preserve it so they can use tomatoes in cooking all year round. But as industrial agriculture and food production take hold, it’s a dying art..
Now try something with me.. Give me a thumbs up (thumbs UP) and say:‘Passata’s made by people’ Give me a thumbs down and say Dolmio’s is made by robots’ (and eaten by puppets apparently).. Which brings me to PEOPLE
These PEOPLE – Jess & Laura –decided the art of passata making was something worth holding onto. So even in a world where we can get tomatoes all year round– they were paying enough attention to know something wasn’t right. By the way if you’ve ever eaten a tomato in winter you’ll know what I’m talking about.. ‘friends don’t let friends eat out of season’
So the bottles that you see here are recycled beer bottles – and THESE PEOPLEattended a pre-Passata Day party.It was at this amazing warehouse in Surry Hills, we’re drinking Coopers long-necks – it was all a bit hipster – But what it did was build anticipation around the day. And now there’s people all over Sydney hanging for their sustainable bottle of passata..
So with this party, and by telling a compelling story about why passata is important, Jess and Laura convinced these PEOPLE – and more than 20 friends, family, neighbours – all very busy, with their own things on - to take time out on their weekend and to join them for.. Passata Day!
So now the PROCESS.It felt like we went to Passata school. We went out to a farm in Bargo – and we learned how to boil, crush, churn and bottle – everything that goes into turning (pause) 300 KILOS of tomatoes into 300 BOTTLES of passata.
It went through a passata machine – very messy but very fun. It was near zero waste – we figured out what to do with 3 boxes of tomato skins and seeds. Our Italian experts told us they used to feed them to the chooks. We didn’t have any chooks so we dried it in the sun and now we have packets of sundried tomato flakes – which are delicious.
We ate fresh pasta – made with last year’s passata – and I think it was one of the most beautiful meals I have ever eaten. And (pause) it had everything to do with how knackered we were and how much effort and love I knew had gone into it. NOW COMPARE THIS TO…
So compare this to out of season tomatoes, stacked in unseen cold storage rooms.Compare it to mass-produced bottles with no backstory – that give us no clue as to how this stuff is actually made.Products shipped 1000s of kms around the world in the name of efficiency and profitability.
And this begins to tell us why Passata Day is so significiant.. Andyeah it’s about the environment.. Yes it’s about our broken food system – but if it was this stuff alone I wouldn’t be up here telling you about it. This has huge pay-offs for YOU.
So let me take a guess at your agenda. You’re super busy, you’re probably hanging out for your next holiday. Many of us would dream about going to Italy on a gourmet food tour. Well - we learned how to make Italian tomato sauce, from Italians. People who take a $10,000 trip to Italy don’t get as authentic an experience as we did that day.
Yes, you’ve got a lot on your plate. But have you got too much on to actually look at your own life and what makes you happy?This incredible cultural experience, knowledge, this connection and community, was right here under our noses. And it makes you wonder – what other experiences haven’t we tapped? What else could be like Passata Day? Finding your passata – is working on your own agenda..
When you start working on your own agenda, you work on our agenda. Making OUR city better and more sustainable actually gives us what we selfishly want. Passata Day is exciting because it represents people getting together and working on something that isn’t their job, yet makes the most of their skills, lets them reach their potential, and help us all out at the same time.
And those of us who are in Sydney’s sustainability community know - it’s just one of the COUNTLESS things that are already happening in Sydney now.
Sustainable cities.. It’s happening – we’re all on board with the issues – we’ve got a community so no-one’s doing this alone anymore – and we’re effective. Many of the things that are happening in Sydney today were out of the question only a few years ago. We have Clover Moore as our Mayor – we have bike lanes! Almost connected to each other..
Passata solved a whole range of sustainability and well-being issues that we’re struggling with in cities.We worked hard, but we did it in a workplace filled with natural light, fresh air, sunshine, physical activity, good food and stimulating conversation. We gained from the wisdom of past generations – who needs sustainability consultants when you’ve got nonnas?
In this simple bottle of passata lies the solution to so many of our problems.. Tonightwe’ve learned that when you find your passata – you won’t be afraid to get stuck in because it furthers YOUR agenda, it furthers OUR agenda, and it makes our city more sustainable.
So whatever it is for you – bikes, food trucks, art, awesome - there’s someone here tonight who shares the same passion. Try to find them and if you can’t – contact me because between us, here in Sydney, we already know them.
