 eliminando la parte
terrosa del gambo con le
radichette e sciacquarli
rapidamente sotto acqua
fresca corrente per
eliminare ogni residuo di
terra.

Immergere i funghi in
una bacinella piena di
acqua tirpida



 e spremere nella bacinella
uno spicchio di limone per
evitare che diventino neri

Battere bene le fettine con un
batticarne,meglio se dopo averle
coperte con una pellicola
trasparente

dopodichè ricordarsi di
infarinarle da entrambi le parti
per bene fino a quando non
risulteranno completamente
bianche.

Prima della fine della
cottura della carne

Quando si aggiungono i
funghi, è meglio
spolverare velocemente
con prezzemolo tritato…
esalterà i sapori senza
coprirli!!
