Ingredients:
● 2 boneless, skinless chicken breasts, sliced into thin strips
● 2 cups broccoli florets
● 1 red bell pepper, sliced
● 1 yellow bell pepper, sliced
● 1/2 onion, thinly sliced
● 3 cloves garlic, minced
● 2 tablespoons coconut oil
● 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
● 1 tablespoon sesame oil
● 1 tablespoon fresh ginger, grated
● Salt and pepper to taste
● Optional toppings: sliced green onions, sesame seeds
Instructions:
1. Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.
2. Add the chicken strips to the skillet and cook until browned and cooked through.
Remove the chicken from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of coconut oil. Add the minced
garlic and grated ginger and sauté for about 1 minute until fragrant.
4. Add the sliced onions, bell peppers, and broccoli florets to the skillet. Stir-fry for
about 5-7 minutes until the vegetables are tender-crisp.
5. Return the cooked chicken to the skillet and stir to combine with the vegetables.
6. In a small bowl, whisk together the soy sauce (or coconut aminos) and sesame oil.
Pour the sauce over the chicken and vegetables, and toss to coat evenly. Cook for an
additional 1-2 minutes to heat through.
7. Season with salt and pepper to taste.
8. Remove from heat and garnish with sliced green onions and sesame seeds, if
desired.
