Food – the way we produce, distribute and consume it – was something that most Americans
took for granted until recently. We were proud of a system that produced an ever-growing and
diverse supply of safe, high quality grains, meats, fruits and vegetables in quantities sufficient
– even after exports- to feed the entire country twice over. Today, anxious questions about
food – its safety, content and nutritional value – are consuming more and more of our national
conversation. And for good reasons.
