I. Business Review:
A. Change
1. Technology
This company has been operating since 2004 and using the
technology is one good tool to maintain good relationship with
its customers. The Harvest frequently sends emails, Text
message, or catalogues to the customers and also Facebook Fan
Page and twitter.
2. Economy
In today’s emerging economy condition in Indonesia especially
in Surabaya it opens the business opportunity and growing
economic welfare to Surabaya people.
3. Politics/legal
Unexpected price changes in petroleum and in another basic
raw material of pastry industry, The Harvest also gets the
impact. The impact will create the price changes of its products
which ranging from homemade bread, chocolate, cookies,
cakes, ice cream, sandwich, and pastries for special occasions.
4. Social and Culture
The Harvest understands how to satisfy its customers’ diversity
in creating customized products to fulfill their needs, they
provide customized pastries and change its theme to follow the

season or occasion such as Christmas, Idul Fitri, Valentine
Day, Independence Day, Chinese New Year, Birthday, etc.
5. Market
The market scope of The Harvest is becoming wider after, it
can reach not only the customers in general but also customers
who are in sugar diet or diet. Moreover, customers can make
order to The Harvest for any special theme of occasion, and
they can help customers to meet their expectation or special
order. For example: a customer order 100 packs of The Harvest
for his son’s birthday, and he makes some orders in the
packaging and he wants to add more some fruits to the cakes.
The Harvest also can accept another special order or
customized orders in order to broaden their business and to
satisfy its customers’ needs.

Nowadays life style trend of healthy life is becoming one of
the inspirations of The Harvest to make high quality and
healthy products.

The Harvest is widely ranged from middle up class people, and they
offer special treatment for BCA users to get 10% discount in all items.

The Harvest competitors are whole producers of pastry in Surabaya
such as Igor’s, J.CO, BreadLife, BreadTalk, Barby’s, Holland Bakery,
Bon Ami, Eaton, Bakerzin, etc.
D. Company
Established in 2004, The Harvest became the first specialized
European style pastry shop chain in Indonesia. Now with 11 outlets, 8
in Jakarta, 1 in Surabaya, 1 in Bandung and latest in City Plaza
Building (Jakarta), have grown steadily delivering the promise of
quality continually to our stakeholders.
The successes of The Harvest lie among the family of a highly
motivated skilled and a disciplined team of 800. Continuous research
and development of products, creative packaging and icing great
service have made them the best in what they do. Their professional
workforce, who is abundantly experienced in high-end F&B circles,
blends the finest ingredients and best quality chocolates of the world
to transform confectionaries into art creating delectable treats.
Currently their pastry team is lead by Eric Gouteyron, a well known
French Chef Pastry. Eric’s mission is to take The Harvest to the next
level of excellence giving our customers a renewed superior
experience in what they do best. They’re extremely proud to introduce
him and also to guarantee the customers that they are in the process of

evolving themselves to continue to bring the customers nothing but the
best products to customers’ home, office, or special event with custom
creations.

II. STP Analysis
A. Segmentation
1. Geographic
Jakarta, Surabaya, and Bandung. Because we do survey in
Surabaya, we’ll focus our marketing analysis from Harvest branch
in Surabaya. Surabaya city is one of the biggest cities in Indonesia
and the economy is good as well.
2. Demographic
The Harvest’s customers are mostly middle-up class people.
Customers’ income starts from Rp 2,000,000. Related to the region
which most of Indonesian are Muslim, therefore Harvest makes
sure that 100% of their products are halal.
3. Behavioral
Occasions can be defined in terms of the time of day, week, and
year or in terms of other well-defined temporal aspects of a

customer’s life. Buyers can be distinguished according to the
occasions when they develop a need, purchase a product. For
example, Harvest provides New Year, Christmas, Chinese New
Year, Idul Fitri, etc.
B. Targeting
To reach out with un-compromised quality product to every major city
in Indonesia and beyond together building a corporation with a highly
disciplined workforce working as a family knit.
C. Positioning
The Harvest states itself as pastry shop that express “Fashionably
Delicious”. The Harvest produces tasty products but still concern
about current trends.

Harvest sells many variants of cake, such as blueberry cheese cake,
raspberry sacher torte, etc. Besides that, Harvest also offers much kind
of beverages, like ice coffee, café latte, etc.

Harvest has many outlets in Indonesia, such as in Bandung, Jakarta
and Surabaya. In Surabaya, the outlet of Harvest is in Jl.Bengawan
no.39.
VI. Marketing Program
It gradually launches some new products such as in the beginning of the year
(January), March, and June. Besides that, The Harvest also corporate with
some famous banks to give interesting discounts to all credit cards holder.

Formalization :
Component Implementation
1. Formalization The rules are made to manage the employees’ performance and set the
disciplined workforce. Those rules are :
1. Working days for employees are from Monday to Sunday,
working hours per day is 10 hours. For managers, the working
hours are 08.00 AM – 06.00 PM
2. There are 2 shifts per day, from 08.00 AM – 06.00 PM and
12.00 AM – 10.00 PM
3. The break time for employees is 1 hours, did by turns
4. Employees will get penalty if they are absent without any
permission. The penalty will be :
a. 1st
warning : verbally accost
b. 2nd
warning : give the warning papers
c. 3rd
warning : fired
5. In the working hours, smoking is not allowed
6. In the working hours, employees have to wear the clothes
required by the company
7. Every employee will get maximal 12 days off in a year
8. In the working hours, employees are not allowed to leave the
store without permission

TECHNICALASPECTS
Location
The Harvest is located at Jl. Bengawan 39 Surabaya. The Harvest has 9 outlets in
Jakarta and 1 outlet in Bandung. The Harvest, which is located in Jl. Bengawan 39, is
in the center of Surabaya and the production processes are done there. The Harvest
located the production process in there because the owner takes into account the cost
and efficiency. It means that The Harvest will be much faster in terms of sales and
does not take high cost for delivery process. The Harvest also concern about the
freshness of the pastry they produced.
Variable determining the location:
1. Availability of Raw Materials
Raw materials used by The Harvest are derived from overseas, such as Russia.
This is not very significant influence on the production location because once a
week or once a month, depending on raw materials, The Harvest imports raw
materials from their suppliers in abroad. In the process of delivery raw materials,
The Harvest uses ship or airplane. For ship, it usually takes a long time. That’s
why The Harvest makes forecasting process for the use of raw materials so that
when they do production process, the raw materials will available on time.
Besides, the cost incurred for delivery by ship is much cheaper than by airplane.
The Harvest uses airplane for urgent circumstances and when there is no safety
stock. Thus, in term of location, it is not so significantly influence to the
availability of raw materials for the most of its raw materials are directly
imported from abroad.
In term of market location, The Harvest sells its products at Jl. Bengawan. As we
know that the location of sales and production of The Harvest is in the same

place, so it is not costly. We highlight the location at Jl. Bengawan because the
location is quite good and strategically in the center of Surabaya. The Harvest
has already a market share among the middle upper class who will not think the
other brands. In the other hand, The Harvest believe that their products is pure
products without preservatives, derived from imported raw materials and has a
lot of variety in their products.
2. Availability of Labor
The amount of labor which is work in The Harvest is quite a lot for the size of
individual firms. The Harvest has approximately 100 employees. However, the
way to obtain labors, The Harvest do not look from the location side where is
close to the settlements. Their employees are mostly live not far from the
location of The Harvest. The employees do not really see near or far the place
they work but they prefer to have a proper paying job. In The Harvest side, they
are not hiring too many employees. Thus, The Harvest did not see a location near
the settlements as a determining factor for the easiness to get employees.
3. Transportation Facilities
Availability of transportation is also not a factor that influences the location of
The Harvest. They have several cars and mini trucks for delivery service. In case
of delivering raw materials is not difficult because they buy raw materials from
abroad, came in Indonesia and shipped by suppliers using transportation selected
by The Harvest. Thus, in essence, The Harvest is a facilitated company in terms
of delivery process because they have their own transportation facilities.

4. Facilities of Water and Electricity
Electricity and water usage are absolutely owned by The Harvest. Thus, for
electricity and water facility problem had been facilitated by the presence of PLN
and PDAM Surabaya.

In terms of layout, The Harvest has a building which consists of:
 Parking Lot
It is used to park vehicles such as motorcycles and cars owned by customers
and The Harvest’s cars.
 Security Post
It is used as a place for security guard who is on duty to maintain the security
of The Harvest.
 Sales Area
It is used to run the sales activity which consists of the sales of pastries, cakes,
cookies, snacks, chocolates, ice cream, and many more.
 Management Room Office
It is used to run company’s management and administration activities such as
finance, accounting, and purchasing raw materials.
 Production Room
It is used for production process to produce all The Harvest’s products.

 Raw Materials Warehouse
It is used to store raw materials that will be used for production process.
 Pastry Storage Warehouse
It is used to store pastry or cakes that have been produced which still cannot
be sold because waiting to be sent to the customers.
Operational Process
 Purchasing Raw Material Activity
In order raw materials, The Harvest selecting raw materials, mostly from
abroad. The Harvest used about 170 raw materials, 70 are from abroad
(Australia, New Zeland, France, Belgium, Russia, Germany, Netherland, etc.)
and the rest come from Indonesia such as:
a. Wheat flour (plain flour and gluten free): Germany
b. Fruit (all kinds of fruit): Russia
c. Milk, Egg and Cheese: New Zeland
Due to the variety of The Harvest’s products are quite a lot, The Harvest is
providing safety stock as stock if the raw materials have not come yet to the
warehouse or there are obstacles during the delivery process.

 Packaging Activity
The Harvest ordered packaging such as cardboard and plastics with a lot of
shape and sizes variety. The Harvest has its own suppliers to order cardboards
and plastics. According to the quality and price, their packaging has its own
standard. For example, in term of wrapping the products, it must be fit, not too
large, so that there will be no air cavity which can cause condensation and
fungus because the products are produced without preservatives. The
packaging will be sent approximately 2 weeks after order from the supplier.
 Receiving Raw Material Activity
The Harvest receive its raw materials from when the warehouse receive the
order receipt, after that they check whether the goods in accordance with the
order receipt. Then, the order receipt will be given to the owner to be checked.
If all the raw materials completed, the stock will be recorded and saved in
stock list.
 Production Activity
Production activity in The Harvest is a full-time or 24 hours without stopping,
but during Eid Fitri the production activity only 20 hours. In the production
process, The Harvest are divided into three shifts for the production process.
Each shift ranges between 8-10 hours. The Harvest is able to produce pastry,
cake, ice etc. which reach ± 2000 pieces so that stock out never occur in The
Harvest and the products always fresh every time customer buy.

Technology This company has been operating since 2004 and using the technology is one good tool to maintain good relationship with its customers. The Harvest frequently sends emails, Text message, or catalogues to the customers and also Facebook Fan Page and twitter. 2. Economy In today’s emerging economy condition in Indonesia especially in Surabaya it opens the business opportunity and growing economic welfare to Surabaya people. 3. Politics/legal Unexpected price changes in petroleum and in another basic raw material of pastry industry, The Harvest also gets the impact. The impact will create the price changes of its products which ranging from homemade bread, chocolate, cookies, cakes, ice cream, sandwich, and pastries for special occasions. 4. Social and Culture The Harvest understands how to satisfy its customers’ diversity in creating customized products to fulfill their needs, they provide customized pastries and change its theme to follow the
  • 4. 4 season or occasion such as Christmas, Idul Fitri, Valentine Day, Independence Day, Chinese New Year, Birthday, etc. 5. Market The market scope of The Harvest is becoming wider after, it can reach not only the customers in general but also customers who are in sugar diet or diet. Moreover, customers can make order to The Harvest for any special theme of occasion, and they can help customers to meet their expectation or special order. For example: a customer order 100 packs of The Harvest for his son’s birthday, and he makes some orders in the packaging and he wants to add more some fruits to the cakes. The Harvest also can accept another special order or customized orders in order to broaden their business and to satisfy its customers’ needs. 6. Life style Nowadays life style trend of healthy life is becoming one of the inspirations of The Harvest to make high quality and healthy products. B. Customer The Harvest is widely ranged from middle up class people, and they offer special treatment for BCA users to get 10% discount in all items.

Company Established in 2004, The Harvest became the first specialized European style pastry shop chain in Indonesia. Now with 11 outlets, 8 in Jakarta, 1 in Surabaya, 1 in Bandung and latest in City Plaza Building (Jakarta), have grown steadily delivering the promise of quality continually to our stakeholders.   • 140. 140 4. Facilities of Water and Electricity Electricity and water usage are absolutely owned by The Harvest. Thus, for electricity and water facility problem had been facilitated by the presence of PLN and PDAM Surabaya. Business Layout In terms of layout, The Harvest has a building which consists of:  Parking Lot It is used to park vehicles such as motorcycles and cars owned by customers and The Harvest’s cars.  Security Post It is used as a place for security guard who is on duty to maintain the security of The Harvest.  Sales Area It is used to run the sales activity which consists of the sales of pastries, cakes, cookies, snacks, chocolates, ice cream, and many more.  Management Room Office It is used to run company’s management and administration activities such as finance, accounting, and purchasing raw materials.  Production Room It is used for production process to produce all The Harvest’s products.
  • 141. 141  Raw Materials Warehouse It is used to store raw materials that will be used for production process.  Pastry Storage Warehouse It is used to store pastry or cakes that have been produced which still cannot be sold because waiting to be sent to the customers. Operational Process  Purchasing Raw Material Activity In order raw materials, The Harvest selecting raw materials, mostly from abroad. The Harvest used about 170 raw materials, 70 are from abroad (Australia, New Zeland, France, Belgium, Russia, Germany, Netherland, etc.) and the rest come from Indonesia such as: a. Wheat flour (plain flour and gluten free): Germany b. Fruit (all kinds of fruit): Russia c. Milk, Egg and Cheese: New Zeland Due to the variety of The Harvest’s products are quite a lot, The Harvest is providing safety stock as stock if the raw materials have not come yet to the warehouse or there are obstacles during the delivery process.   • 142. 142  Packaging Activity The Harvest ordered packaging such as cardboard and plastics with a lot of shape and sizes variety. The Harvest has its own suppliers to order cardboards and plastics. According to the quality and price, their packaging has its own standard. For example, in term of wrapping the products, it must be fit, not too large, so that there will be no air cavity which can cause condensation and fungus because the products are produced without preservatives. The packaging will be sent approximately 2 weeks after order from the supplier.  Receiving Raw Material Activity The Harvest receive its raw materials from when the warehouse receive the order receipt, after that they check whether the goods in accordance with the order receipt. Then, the order receipt will be given to the owner to be checked. If all the raw materials completed, the stock will be recorded and saved in stock list.  Production Activity Production activity in The Harvest is a full-time or 24 hours without stopping, but during Eid Fitri the production activity only 20 hours. In the production process, The Harvest are divided into three shifts for the production process. Each shift ranges between 8-10 hours. The Harvest is able to produce pastry, cake, ice etc. which reach ± 2000 pieces so that stock out never occur in The Harvest and the products always fresh every time customer buy.
