2. Notes Be sure to pick over the crab meat. It sometimes contains shells! If you like your crab cakes spicy, add an extra teaspoon of Old Bay. You’ll need ... 1 small onion 1 bell pepper 2 tsp. Old Bay 1 tsp. Worcestershire ¼ tsp. hot dry mustard ¼ tsp. Tabasco 1 egg, beaten 1 scant C. mayonnaise 1 C. crushed potato chips 1 lb. lump crab meat
3. Chop up bell pepper & onion. For sweeter crab cakes, use red bell peppers.
4. Sauté in 2 Tbsp. butter about 5 minutes. Remove from heat. Stir frequently, making sure the vegetables become soft without blackening. Then remove from heat.
5. 2 tsp. Old Bay 1 tsp. Worcestershire ¼ tsp. Tabasco ¼ tsp. hot dry mustard 1 egg Scant C. mayo 1 C. crushed chips 1 lb. lump crab Mix gently but thoroughly. Add spices, mayo, potato chips, egg & crab to pan.
6. Use an ice cream scoop or ¼ C. measure to form cakes. Place cakes on an ungreased jelly roll pan. Then cover them with plastic wrap and chill them for an hour or more.
7. Fry or bake until golden brown. Bake he cakes in a 350 degree oven for approximately 25 minutes. To make them browner, put them under the broiler for 5 minutes more. You can also fry the cakes in butterover medium high heat.
8. Garnish with lemon wedges. Serve them on hamburger buns or alone. I like to squirt fresh lemon on my crab cakes, as will many of your guests.
