In the regularly scheduled EMP Communication, summaries and adverse sampling events need to be reported, corrective actions taken, trends that are being seen – (both good and bad). If the trending in showing a decrease in Listeria positives or a decrease in Enterobacteriacaea “action level positives” this should be reported to show the progress of the EMP program. Issues needing attention should be clearly identified and solutions should be sought – both short-term needs (employee training on EMP) and long term needs such as budgeting and replacing equipment with poor sanitary design should be addressed.
It all starts with identifying the correct sampling sites for the test of interest.
Then determine frequency of sampling for the particular test.
Analyze the data, perform root cause analysis as needed and implement corrective actions as necessary.
A risk based process can be undertaken to determine the most appropriate test points, keeping in mind that the aim is to assess cleanliness and control the risk posed by having an unclean surface.
The actual sampling locations are described in terms of zones. Zone 1 represents food contact surfaces, such as conveyors, utensils Zone 2 include areas adjacent to food contact surfaces such as bearings, equipment panels. Zone 3 includes everything else within the production area –floors, walls, drains etc. Zone 4 encompasses all other non production areas of the facility.
Generally, a surface that has direct contact with a product that will not be processed further to eliminate microbial risk is a high-risk point.
In contrast, a surface that does not have contact with the product and/or where the product will be processed further to eliminate microbial risk is a lower risk point.
To address this risk the level of difficulty in cleaning, a surface must be considered to assess if the surface condition or material can reduce the effectiveness of the cleaning. The level of risk associated with the surface
may increase where cleaning is difficult.
So a chart like this that brings these 2 information together can be used to determine the test points as well as frequency of testing for each test point.
Monitoring ATP is probably one of the well established approaches to environmental monitoring.
ATP can come from different sources, microbes, animals humans and organic matter, being the energy currency molecule for all living organisms, is a great indicator for cleanliness , its presence can be coupled to the production of light and as organisms and organic residues increase, also ATP levels will, and this results in an increase in light.
So it is a rapid technology to measure effectiveness of cleaning, can thus it is a valuable tool for validation and verification of cleaning and sanitation procedures.
Even more important, ATP trending analysis enalbes to verify if cleaning procedure over time is under control
