Introduction:
 Khyber Pakhtunkhwa (URDU: ) is a province in PAKISTAN. The province was created in 1901.
 The capital is Peshawar
 Khyber Pakhtunkhwa is divided into 26 districts.
 Pakhtunkhwa is derived from Pakhtun and Khwa, the former refers to the ethnic group and the 
latter literally means "heart".
Culture:
 KPK culture is based on Islam and Pashtunwali, which is an ancient way of life, as well as 
speaking of the Pashto language and wearing Pashtun dress.
 The Khyber Pakhtunkhwa is populated by a large variety of tribes, sub tribes, each with
its own network, collectively called Pakhtun or Pathan.
 Honor, revenge and hospitality are the nature of people
 while the Jirga, plays an important role in resolving off issues according to Riwaj or tradition

Languages:
• In KPK about 67% of the people are Pashtuns and they
speak Pashto language as regional language.
• Other widely spoken languages are Erina, kalami,
khowar, kohistani, yidgha.
• Urdu is understood by majority of the people.
KPK CUISINE
Peshawari Chapli Kabab:
• 1 kg beef mince
• 1 tbsp white cumin chopped
• 1 tsp coriander
• salt (as required)
• 4 pieces green chili chopped
• 3 pieces tomato chopped (without seeds)
• 3 tsp red pepper (crushed)
• 3 tbsp green coriander (chopped)
• 1 & 1/2 tbsp pomegranate seeds (crushed)
• 2 tsp ginger (chopped)
• 1 tsp black pepper (crushed)
• 1/2 onion (chopped)
• 1 eggs
• 6 tbsp corn flour
• oil (as required)
Directions for Chappli Kabab:
 1- In a pot take beef mince, salt, cumin, coriander, green
chili, tomato, red pepper crushed, green coriander,
pomegranate seeds, mint, ginger, black pepper, onion, egg
and corn flour and mix it well and make kebabs.
 2- Take oil in a pot and fry them. Your tasty Chapli Kebabs
are ready.
 Cooking Time: 40 Minutes Serves: 3-4
Kabuli Pulao:
• Qabel’i , Quabili or Kabuli Palaw is a most popular dish consisting of steamed
rice mixed with raisins, carrots, and lamb.
• It is made by cooking basmati or long grained rice in a brothy sauce (which
makes the brown rice).
• This dish may be made with lamb, chicken or beef.
• It is baked in the oven and may be topped with fried sliced carrots, raisins,
orange peel strips, and chopped nuts like pistachios or almonds.
• The meat is covered by the rice or buried in the rice mixture.

Dum pukht:
• Dum means to “breath in’’ and pukht means to ‘’çook’’.
• Dum pukht, larheem or slow oven cooking is a technique in which meat and
vegetables are cooked over a low flame, generally in sealed containers with few
spices.
• It uses a round, heavy-bottomed pot, preferably a Handi (clay pot).
• Cooking slowly in its juices, the food retains its natural aromas.
• In some cases, cooking dough is spread over container to seal food known as
pardah (veil).

Peshawari Kebab:
Peshawar is well known for making traditional Kebab, served with mint sauce,
salad and traditional NAAN (Bread).

Mutton Karahi:
• Mutton karahi is a kind of open air cooked dish, mainly consist of
mutton, green chillies, tomatoes and salt.
• It took 45 mins to be cooked and served hot.

ShinwariChicken/Mutton/Lamb Karahi:
• It belongs to Shinwari Tribe, which is found in Nangarhar Province of
Afghanistan and in Landi Kotal area of FATA.
• This dish is made by meat i.e., mutton, beef, chicken or lamb.
• Pashtuns are mainly meat lovers, so it enriches with all the aroma and
fragrant flavors to satiate their taste buds.

Peshawari Falooda:
• From the name it lies under category of sweet dish and it is the best falooda
available at Qissa Khwani Bazaar.

Mardan Chapli Kebab:
• Kabab is one of these food items which can be found in every small
village of Pukhtunkhwa.
• It is made of mince, onions, tomatoes, chillies, maze flour, coriander
and a few other spices.
• Mardan is one of the places where you can get the best Kebabs. People
from other regions come over here to enjoy eating Kebabs.

• The famous names of Kabab Hotels are Thooth Karhay, Omar Kababi, Shah Gul
Kababi,Kanrha Kababi Par Hoti, Abdul Haq Mayar,Takhtbai Kabab,Shahbaz
Garha, Lala, Baba and Kaka Kababs, Shankar Kababi and many others.
• It was originally flat oval shaped but now a different kind of Kabab called Seekh
Kabab.

Mardan Perras/Badayooni Perras:
• Every city has its own specialty of sweets. Mardan is famous for a type of sweet
called Badayooni Perras.
• It is a unique type of sweet made of a special recipe. And this recipe is a secret
to everyone.
• Badayoon is a district in Utrapradesh Province of India. The owners of
Badayooni sweets are basically Pushtoons returning from Badayoon India at the
time partition of India. They started their business of sweet in 1950. They were
Ibn-e-Ali, Haji Mehboob Ali Khan and Haji Mehmood Ali Khan.

• It has got a unique flavour. No one in the country can make such a tasty sweet.
According to the owner a lot of people could make similar sweet but they can not
produce the taste of Badayooni Perras.
• The price of Badayooni is affordable to every one. The current price is 110
Rupees per 1Kg or £1.00 per Kg. This is one of the souvenirs of Mardan. The
people all around the world like the perras and appreciate the taste.

Chicken/Mutton/Lamb Karahi:
• Chicken Karahi, ghost Karahi or Karahi Chicken is a famous dish in Pakistan. It
is prepared with mutton, lamb or chicken meat and it is popular for its spicy
taste. It is called Karahi, because of its cooking utensil, a karahi (Wok).

Chapli Kebab:
• Chapli Kebabs, popularly known as Peshawari Chapli Kebabs are well-known
Pakistani dish that is very delicious in taste. It is a traditional of Pakistani recipe
and often serves with Imili chatni (tamarind sauce) or green chatni (mint/green
chilli sauce).

Charsi Tikka:
• Charsi Tikka is a famous dish of Afghanistani cuisine, due to its tasty flavor.
Charsi Tikka is a fine blend of Persian and Afghani cuisine and commonly
available in the Swat Valley.

Chicken/Mutton Biryani:
• Biryani is a traditional Pakistani dish and it is made by Basmati Rice with
meat or vegetables. Its origin is not found yet it often relates to North
India; Delhi (Mughlai cuisine) and Lucknow (Awadhi cuisine). Its rich
taste and aroma of flavors, makes it the most popular dish of the whole
region

Sajji:
• It is popular dish of Balochistan origin. It is made with whole lamb or chicken,
marinated with salt only; stuffed with rice and roasted over coal embers.
• It is served with a special bread, called “Kaak”, baked in oven “tandoor”.

Khyber pakhtunkhwa and its traditions

  • 3. Introduction:  Khyber Pakhtunkhwa (URDU: ) is a province in PAKISTAN. The province was created in 1901.  The capital is Peshawar  Khyber Pakhtunkhwa is divided into 26 districts.  Pakhtunkhwa is derived from Pakhtun and Khwa, the former refers to the ethnic group and the  latter literally means "heart".
  • 4. Culture:  KPK culture is based on Islam and Pashtunwali, which is an ancient way of life, as well as  speaking of the Pashto language and wearing Pashtun dress.  The Khyber Pakhtunkhwa is populated by a large variety of tribes, sub tribes, each with its own network, collectively called Pakhtun or Pathan.  Honor, revenge and hospitality are the nature of people  while the Jirga, plays an important role in resolving off issues according to Riwaj or tradition 12/22/18

Crops & Fruits & natural resources:  Crops: - Rice, Maize, corn, Pulses, Sugarcane, Cotton, Chilies, Wheat, Barley, Tobacco  Fruits: - Peach, Plum, Pear, Apricot, Pomegranate other fruits,  Natural resources:- Oil fields, mines of marble, Gems Stone  Wood (largest producer in Pakistan), Sui Gas, Uranium, Electricity, salt, lithium, Steel, charcoal,  etc.

  • 12. KHATTAK DANCE:  Khattak dance is a swift martial attan dance usually performed while carrying a sword and a handkerchief by the tribesmen from the agile Khattak tribe of Pashtuns in Afghanistan and some north western part of Pakistan 12/22/18
  • 13. Languages: • In KPK about 67% of the people are Pashtuns and they speak Pashto language as regional language. • Other widely spoken languages are Erina, kalami, khowar, kohistani, yidgha. • Urdu is understood by majority of the people.

Peshawari Chapli Kabab: • 1 kg beef mince • 1 tbsp white cumin chopped • 1 tsp coriander • salt (as required) • 4 pieces green chili chopped • 3 pieces tomato chopped (without seeds) • 3 tsp red pepper (crushed) • 3 tbsp green coriander (chopped) • 1 & 1/2 tbsp pomegranate seeds (crushed) • 2 tsp ginger (chopped) • 1 tsp black pepper (crushed) • 1/2 onion (chopped) • 1 eggs • 6 tbsp corn flour • oil (as required) Directions for Chappli Kabab:  1- In a pot take beef mince, salt, cumin, coriander, green chili, tomato, red pepper crushed, green coriander, pomegranate seeds, mint, ginger, black pepper, onion, egg and corn flour and mix it well and make kebabs.  2- Take oil in a pot and fry them. Your tasty Chapli Kebabs are ready.  Cooking Time: 40 Minutes Serves: 3-4
  • 16. Kabuli Pulao: • Qabel’i , Quabili or Kabuli Palaw is a most popular dish consisting of steamed rice mixed with raisins, carrots, and lamb. • It is made by cooking basmati or long grained rice in a brothy sauce (which makes the brown rice). • This dish may be made with lamb, chicken or beef. • It is baked in the oven and may be topped with fried sliced carrots, raisins, orange peel strips, and chopped nuts like pistachios or almonds. • The meat is covered by the rice or buried in the rice mixture. 12/22/18

Dum pukht: • Dum means to “breath in’’ and pukht means to ‘’çook’’. • Dum pukht, larheem or slow oven cooking is a technique in which meat and vegetables are cooked over a low flame, generally in sealed containers with few spices. • It uses a round, heavy-bottomed pot, preferably a Handi (clay pot). • Cooking slowly in its juices, the food retains its natural aromas. • In some cases, cooking dough is spread over container to seal food known as pardah (veil). 12/22/18
  • 20. Peshawari Kebab: Peshawar is well known for making traditional Kebab, served with mint sauce, salad and traditional NAAN (Bread). 12/22/18
  • 21. Mutton Karahi: • Mutton karahi is a kind of open air cooked dish, mainly consist of mutton, green chillies, tomatoes and salt. • It took 45 mins to be cooked and served hot. 12/22/18

ShinwariChicken/Mutton/Lamb Karahi: • It belongs to Shinwari Tribe, which is found in Nangarhar Province of Afghanistan and in Landi Kotal area of FATA. • This dish is made by meat i.e., mutton, beef, chicken or lamb. • Pashtuns are mainly meat lovers, so it enriches with all the aroma and fragrant flavors to satiate their taste buds. 12/22/18
  • 23. Peshawari Falooda: • From the name it lies under category of sweet dish and it is the best falooda available at Qissa Khwani Bazaar. 12/22/18

Mardan Chapli Kebab: • Kabab is one of these food items which can be found in every small village of Pukhtunkhwa. • It is made of mince, onions, tomatoes, chillies, maze flour, coriander and a few other spices. • Mardan is one of the places where you can get the best Kebabs. People from other regions come over here to enjoy eating Kebabs. 12/22/18

CONT. • The famous names of Kabab Hotels are Thooth Karhay, Omar Kababi, Shah Gul Kababi,Kanrha Kababi Par Hoti, Abdul Haq Mayar,Takhtbai Kabab,Shahbaz Garha, Lala, Baba and Kaka Kababs, Shankar Kababi and many others. • It was originally flat oval shaped but now a different kind of Kabab called Seekh Kabab. 12/22/18
  • 26. Mardan Perras/Badayooni Perras: • Every city has its own specialty of sweets. Mardan is famous for a type of sweet called Badayooni Perras. • It is a unique type of sweet made of a special recipe. And this recipe is a secret to everyone. • Badayoon is a district in Utrapradesh Province of India. The owners of Badayooni sweets are basically Pushtoons returning from Badayoon India at the time partition of India. They started their business of sweet in 1950. They were Ibn-e-Ali, Haji Mehboob Ali Khan and Haji Mehmood Ali Khan. 12/22/18
  • 27. CONT. • It has got a unique flavour. No one in the country can make such a tasty sweet. According to the owner a lot of people could make similar sweet but they can not produce the taste of Badayooni Perras. • The price of Badayooni is affordable to every one. The current price is 110 Rupees per 1Kg or £1.00 per Kg. This is one of the souvenirs of Mardan. The people all around the world like the perras and appreciate the taste. 12/22/18
  • 28. SWAT: Chicken/Mutton/Lamb Karahi: • Chicken Karahi, ghost Karahi or Karahi Chicken is a famous dish in Pakistan. It is prepared with mutton, lamb or chicken meat and it is popular for its spicy taste. It is called Karahi, because of its cooking utensil, a karahi (Wok). 12/22/18
  • 29. Chapli Kebab: • Chapli Kebabs, popularly known as Peshawari Chapli Kebabs are well-known Pakistani dish that is very delicious in taste. It is a traditional of Pakistani recipe and often serves with Imili chatni (tamarind sauce) or green chatni (mint/green chilli sauce). 12/22/18
  • 30. Charsi Tikka: • Charsi Tikka is a famous dish of Afghanistani cuisine, due to its tasty flavor. Charsi Tikka is a fine blend of Persian and Afghani cuisine and commonly available in the Swat Valley. 12/22/18
  • 31. Chicken/Mutton Biryani: • Biryani is a traditional Pakistani dish and it is made by Basmati Rice with meat or vegetables. Its origin is not found yet it often relates to North India; Delhi (Mughlai cuisine) and Lucknow (Awadhi cuisine).   • 32. Sajji: • It is popular dish of Balochistan origin. It is made with whole lamb or chicken, marinated with salt only; stuffed with rice and roasted over coal embers. • It is served with a special bread, called “Kaak”, baked in oven “tandoor”. 12/22/18
