3. Introduction:
Khyber Pakhtunkhwa (URDU: ) is a province in PAKISTAN. The province was created in 1901.
The capital is Peshawar
Khyber Pakhtunkhwa is divided into 26 districts.
Pakhtunkhwa is derived from Pakhtun and Khwa, the former refers to the ethnic group and the
latter literally means "heart".
4. Culture:
KPK culture is based on Islam and Pashtunwali, which is an ancient way of life, as well as
speaking of the Pashto language and wearing Pashtun dress.
The Khyber Pakhtunkhwa is populated by a large variety of tribes, sub tribes, each with
its own network, collectively called Pakhtun or Pathan.
Honor, revenge and hospitality are the nature of people

13. Languages:
• In KPK about 67% of the people are Pashtuns and they
speak Pashto language as regional language.
• Other widely spoken languages are Erina, kalami,
khowar, kohistani, yidgha.
• Urdu is understood by majority of the people.
15. Peshawari Chapli Kabab:
• 1 kg beef mince
• 1 tbsp white cumin chopped
• 1 tsp coriander
• salt (as required)
• 4 pieces green chili chopped
• 3 pieces tomato chopped (without seeds)
• 3 tsp red pepper (crushed)
• 3 tbsp green coriander (chopped)
• 1 & 1/2 tbsp pomegranate seeds (crushed)
• 2 tsp ginger (chopped)
• 1 tsp black pepper (crushed)
• 1/2 onion (chopped)
• 1 eggs
• 6 tbsp corn flour
• oil (as required)
Directions for Chappli Kabab:
1- In a pot take beef mince, salt, cumin, coriander, green
chili, tomato, red pepper crushed, green coriander,
pomegranate seeds, mint, ginger, black pepper, onion, egg
and corn flour and mix it well and make kebabs.
2- Take oil in a pot and fry them. Your tasty Chapli Kebabs
are ready.

16. Kabuli Pulao:
• Qabel’i , Quabili or Kabuli Palaw is a most popular dish consisting of steamed
rice mixed with raisins, carrots, and lamb.
• It is made by cooking basmati or long grained rice in a brothy sauce (which
makes the brown rice).
• This dish may be made with lamb, chicken or beef.
• It is baked in the oven and may be topped with fried sliced carrots, raisins,
orange peel strips, and chopped nuts like pistachios or almonds.
• The meat is covered by the rice or buried in the rice mixture.

18. Dum pukht:
• Dum means to “breath in’’ and pukht means to ‘’çook’’.
• Dum pukht, larheem or slow oven cooking is a technique in which meat and
vegetables are cooked over a low flame, generally in sealed containers with few
spices.
• It uses a round, heavy-bottomed pot, preferably a Handi (clay pot).
• Cooking slowly in its juices, the food retains its natural aromas.
• In some cases, cooking dough is spread over container to seal food known as
pardah (veil).

• It belongs to Shinwari Tribe, which is found in Nangarhar Province of
Afghanistan and in Landi Kotal area of FATA.

24. Mardan Chapli Kebab:
• Kabab is one of these food items which can be found in every small
village of Pukhtunkhwa.
• It is made of mince, onions, tomatoes, chillies, maze flour, coriander
and a few other spices.
• Mardan is one of the places where you can get the best Kebabs. People
from other regions come over here to enjoy eating Kebabs.

26. Mardan Perras/Badayooni Perras:
• Every city has its own specialty of sweets. Mardan is famous for a type of sweet
called Badayooni Perras.
• It is a unique type of sweet made of a special recipe. And this recipe is a secret
to everyone.
• Badayoon is a district in Utrapradesh Province of India. The owners of
Badayooni sweets are basically Pushtoons returning from Badayoon India at the
time partition of India. They started their business of sweet in 1950. They were
Ibn-e-Ali, Haji Mehboob Ali Khan and Haji Mehmood Ali Khan.

• Chicken Karahi, ghost Karahi or Karahi Chicken is a famous dish in Pakistan. It
is prepared with mutton, lamb or chicken meat and it is popular for its spicy
taste. It is called Karahi, because of its cooking utensil, a karahi (Wok).
