From a simple caprese salad served with burrata,
olive oil, and balsamic vinegar to complex osso buco
(slow-braised veal shanks), Italian cuisine offers a
variety of classic entrees that go beyond the
standard pasta dish.

that pairs well with stewed sweet peppers, maiale in
agrodolce begins with Frenched bone-in pork chops,
seasoned and marinated in extra virgin olive oil, salt,
and freshly ground black pepper. As the meat sits for
approximately a half hour, balsamic vinegar and
honey are combined in a saucepan to reduce
before the incorporation of unsalted butter and fresh
rosemary. The pork chops then grill over an open
flame until cooked through and browned on the
exterior. The reduced sauce is used for basting and
adds depth of flavor.
