5. Enhancement of Developed Food Products from CVRC Open-pollinated (OPV) White and
Pigmented Corn in Region 02
PROJECT BACKGROUND
Tagged as leading corn industry hub, Cagayan Valley is contributing
23.9% to the National Corn Production (PSA, 2014)
Despite the region’s huge production volume, farmers are faced with
problem of low profitability due to poor grain value
Improving value of corn harvest requires product development and
processing of attractive products for increased income and utilization
6. Enhancement of Developed Food Products from CVRC Open-pollinated (OPV) White and

A traditional breakfast drink
from Cagayan Valley Region
particularly in the northern parts
of Isabela and Cagayan

purple and glutinous corn which
is rich in protein and low in
glycemic index.
26. SELECT, GRADE AND CLEAN the corn grits, make sure to remove small
stones or other foreign materials that may be present from your grits.
27. Pan roast 1kg of Corn grits over low to medium heat for at least 30 minutes and
stir the grits continuously to achieve even roasting.

• 5 kg glutinous corn grits may approximately yield 25
packs (250 grams each) of Cracknic
36. Mangi Pansi
A corn and vegtable enriched noodles. It is made with
white and pigmented corn which is rice in protein and low
in glycemic index. The noodles can be used as pansit
guisado, palabok, spaghetti and carbonara.
37. Mangi Pansi

42. INGREDIENTS
Corn helps in the PREVENTION of digestive ailments like
constipation and hemorrhoids as well as colorectal
cancer.
Some components present in corn act as ANTI-CANCER
agents and prevent Alzheimer’s.
CARBOHYDRATES compose about 85% of the corn kernel.
This carbohydrate or starch is made up of AMYLOSE, a
straight chain glucose polymer and AMYLOPECTIN, its
branched counterpart.
The FIBER content of one cup of corn equals 18.4% of the
daily recommended allowance.
This aids in alleviating DIGESTIVE PROBLEMS such as
constipation and hemorrhoids, as well as lowering the
risk of colon cancer.
Low in Glycemix Index
43. Maize Silky Sip comes from
Corn Silk which is regarded as
traditional medicine for
several illnesses. It was
awarded 3rd Most Innovative
Product during the 13th
National Technology Forum
at DA-BAR. (2017)
44. • For 1 kg of corn silk
• Boil 10 liters of water and add 100
grams lemongrass Stalk and leaves and
1 kg corn silk
• Simmer under low to medium heat for

ownership, management, use, and commercialization of intellectual
property generated from Research and Development funded by
government and for other purposes”.
Government funded R&D outputs must be readily & accessibly
transferred to target clients. It is a SIN to keep the technology.

In most parts of region 02, white corn farming is usually done on a subsistence level
Farmers tend to grow white corn for family consumption but for farmers who rely on white corn as their main source of income, the benefit does not normally look appealing due to low yield of white corn for food
Together with the continuous research on white corn breeding and production improvement strategies, DA-CVRC, through PRA in 2015 in major white corn producing areas, has initiated the research and development of food products out of OPV white and pigmented corn in the region
Seeing its potential for use in processing, it has the potential for boosting the income of white corn farmers in the region, therefore complementing the region’s identity as the corn capital of the Philippines.
- This is the project framework showing the series of activities undertaken to achieve the goal and objectives aligned with the value chain of white corn production and processing in the region
Includes testing of different varieties for its suitability to the different products
To test preference of consumer panelists between different product formulations
These three products (different rice-corn blend) aim to promote the consumption of corn grits in addition to rice as staple food, addressing the shortage of rice in the country and reducing rice imports.
To test preference of consumer panelists between different product formulations until came up with right high acceptability,
