Kerala Style French Beans Stir Fry
Ingredients
500 gms French Beans
Salt to taste
For Coarse Grinding
50 gms Grated coconut
5 gms Fresh Green Chili
5 gms Garlic
30 gms Shallots
Pinch Turmeric powder
5 gms Cumin seeds
For Tempering
15 ml Coconut oil
5 gms Black Mustard seeds
3 Gms Dry Red Chili
A Sprig Curry leaves
Procedure
Sting the beans, wash it and chop it into small pieces.
Grind/pulse coconut, green chilli, pearl onions, garlic, turmeric powder and cumin
seeds just for a second.
2. Heat oil in a pan, add mustard seeds, when it splutters, add dry red chili and curry
leaves.
Add the coconut mixture and cook for 2-3 minutes on low heat.
Add the chopped beans, salt needed and mix well.
Sprinkle water and cook covered, stirring from time to time until the French beans
becomes tender.
Note:
You can prepare any vegetable in the same method just by replacing the French
beans instead…..

Cauliflower
Green Moong
Okra
And the list goes on…….which would be suffixed with the term thoran….
