Barbeque Chicken Recipe with Pineapple Sauce
An exotic baked chicken dish combined with pineapple sauce and delicious spices
is a wonderfully spicy, sweet dish.
All you need
3-4 pounds whole chicken
cooking spray
1 cup al alali Tomato Ketchup
1 cup brown sugar
3. 1 can al alali Pineapple with juice
1 tsp. al alali Hot Sauce
1/4 cup apple cider vinegar
2 tsp. minced garlic
2 tsp. al alali Paprika
1 tsp. ground mustard
Directions
Wash chicken and pat dry. Split chicken in half, lengthwise, down backbone
by trimming away excess fat and skin. Place it in a Ziploc bag and cover with
marinade and refrigerate for 2-4 hours.
Clean and oil the grills. Place coals on one side of grill and heat to medium-
high.
Remove chicken from marinade and pat dry. Spray cooking spray on it and
place over direct heat, keeping skin-side down.
Grill the both sides of chicken to leave grill marks. Move chicken away from
heat and closing grill lid, cook the chicken for 45 minutes.
Turn chicken over and cook again for another 45 minutes.
Make the pineapple sauce to save the time. Combine al alali Tomato
Ketchup, crushed pineapple, vinegar, brown sugar, al alali Paprika, garlic,
ground mustard, and cayenne. Boil on stove until sauce thickens.
Brush the chicken with pineapple sauce and brown both sides over hotter
part of grill. For more flavour, add more sauce to the chicken, repeat the
process with another coat.
Remove chicken from grill and wrap in foil. The chicken recipe is ready to
serve with an infusion of fruity flavor…Enjoy!
The meat served with a fruit sauce or with some fruits on the side can make the
dish more succulent. You can also cook chicken with fruit on the grill as the smoky
grill can add more flavor to the recipe. Adding any fresh fruit with coconut milk or
4. cream to chicken curries will enhance the taste of curry giving it a nice contrast.
